SKILLET CROOKNECK SQUASH AND ONIONS

Skillet Crookneck Squash and Onions image

We. Love. Squash. Simple, with only 3 other ingredients, besides salt and pepper, this recipe sets off the delicious, slightly sweet flavor of crookneck or summer squash. Mom used to stew squash, but this vegetable releases a lot of water when it cooks, so I don't add any water. The long, slow cooking helps to release the natural sugars in the onion and the squash. You can add additional herbs or seasonings, if you like, or cook it for less time to make it firmer, but this is how we do it. Just squash.

SAUTéED YELLOW SQUASH WITH ONIONS

Sautéed Yellow Squash With Onions image

We enjoy this dish all year long and it goes well with any entrée! It is one of the ways my mother liked to prepare yellow squash for our family. The yellow color helps make a pretty plate. I have found that a combination of butter and olive oil is great for sautéing (Paula Deen agrees). Purchase small fresh squash.

Provided by Seasoned Cook

Categories     Vegetable

Time 35m

Yield 2-3 serving(s)

Number Of Ingredients 8

6 yellow squash, thinly sliced
1 sweet onion, chopped
1/4 teaspoon garlic powder
1/4 teaspoon Lawry's Seasoned Salt
2 tablespoons olive oil
2 tablespoons butter
salt
pepper

Steps:

  • Cut squash into thin slices. Spread slices out onto paper towels. Salt and allow to "sweat". After 10 minutes blot with paper towel. Flip slices over and repeat with salt and blot after 10 minutes. This allows salt to flavor squash and releases water for better sautéing.
  • In a 10 inch saucepan combine olive oil and butter. Lightly sauté onion first and set aside into small bowl.
  • In same saucepan sauté squash on low heat until tender. Before removing from heat add sautéed onions and sprinkle with Lawry's seasoned salt, garlic powder and black pepper.
  • Note: For best flavor use a sweet onion.

SKILLET SUMMER SQUASH

Skillet Summer Squash image

The good old-fashioned country way. This is definitely NOT diet food. You don't drain the bacon fat off after you brown it. If you really have to, you can substitute butter, but it won't be the same. You can also use this recipe with a combination of yellow and pattypan squash.

Provided by Clotho98

Categories     Side Dish     Vegetables     Squash     Summer Squash

Time 50m

Yield 4

Number Of Ingredients 4

4 slices bacon, cut into small pieces
1 onion, chopped
2 pounds summer squash, sliced diagonally 1/2 inch thick
salt and ground black pepper to taste

Steps:

  • Cook and stir bacon in a skillet over medium heat until crisp, 8 to 10 minutes. Add onions and cook in the bacon drippings until softened, 3 to 5 minutes. Add squash, salt, and black pepper; stir to coat.
  • Cover skillet and cook squash mixture over low heat until tender, about 25 minutes.

Nutrition Facts : Calories 182.4 calories, Carbohydrate 11.9 g, Cholesterol 19 mg, Fat 13.2 g, Fiber 4.8 g, Protein 5.7 g, SaturatedFat 4.3 g, Sodium 238.9 mg, Sugar 1.2 g

Tips:

  • Choose the right squash. This recipe works best with hard squash varieties like butternut squash, acorn squash, or kabocha squash. These squashes have a dense, firm texture that holds up well to cooking.
  • Cut the squash into even-sized pieces. This will ensure that they cook evenly. If the pieces are too large, they will take longer to cook and may not cook through evenly.
  • Don't overcrowd the skillet. If you overcrowd the skillet, the squash will not brown properly and will steam instead of sautéing.
  • Be patient. Sautéing the squash takes time. Don't rush the process or the squash will not be caramelized and flavorful.
  • Season the squash to taste. Once the squash is cooked, season it with salt, pepper, and any other desired seasonings.
  • Serve the squash immediately. Sautéed squash is best served hot. You can garnish it with fresh herbs like parsley or cilantro.

Conclusion:

Skillet squash and onions is a simple but flavorful dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. With its vibrant colors and delicious flavor, this dish is sure to be a hit with everyone at the table. So next time you are looking for a quick and easy side dish, give skillet squash and onions a try. You won't be disappointed!
