Skillet Shrimp Scampi with Linguine Recipe - (4.2/5) image

Provided by á-47820

Number Of Ingredients 11

Kosher salt
1-1/2 pounds linguine
5 Tbsp extra-virgin olive oil
6 Tbsp unsalted butter
3 Tbsp minced fresh garlic (about 8 or 9 cloves)
2 pounds large shrimp, peeled and deveined
1/2 tsp coarsely ground black pepper
1/4 tsp hot red pepper flakes
1/4 C fresh flat-leaf parsley
1/4 C freshly squeezed lemon juice
1/4 C freshly grated Parmesan cheese

Steps:

  • Bring to a boil a large pot of water seasoned with 1 tablespoon of kosher salt, add the linguine, and cook until al dente, 7 to 10 minutes. Drain, run under cool water, drain again, place the linguine back in the pot and toss 1 tablespoon olive oil. Set aside, keeping warm. Melt the butter with the remaining olive oil in a 10" to 13" well seasoned cast iron skillet over medium-high heat. Add the garlic and sauté for 3 minutes, being careful not to burn. Add the shrimp, 1 teaspoon of kosher salt, and the pepper; sauté until the shrimp begin to turn pink, 5 to 7 minutes. Remove from the heat and toss with red pepper flakes, parsley, lemon juice, and Parmesan cheese. Pour the shrimp mixture over the cooked linguine, tossing to combine, and serve immediately.

Tips:

  • Use fresh shrimp: Fresh shrimp will give your scampi the best flavor. If you can't find fresh shrimp, frozen shrimp will also work, but be sure to thaw them completely before cooking.
  • Cook the shrimp properly: Shrimp cooks very quickly, so it's important not to overcook it. Cook the shrimp for just a few minutes, or until they are pink and opaque.
  • Use a good quality white wine: The white wine you use in your scampi will make a big difference in the flavor of the dish. Choose a dry white wine that you enjoy drinking.
  • Don't skimp on the butter: Butter is what gives scampi its rich, creamy flavor. Use a good quality butter and don't be afraid to use plenty of it.
  • Add some fresh herbs: Fresh herbs, such as parsley, basil, and thyme, can add a lot of flavor to scampi. Add them at the end of cooking to preserve their flavor.
  • Serve scampi with your favorite pasta: Scampi is traditionally served with fettuccine, but you can also use other types of pasta, such as spaghetti or linguine.

Conclusion:

Skillet shrimp scampi is a quick and easy weeknight meal that's sure to please everyone at the table. It's a great way to use up leftover shrimp, and it's also a great dish to serve when you're entertaining guests. So next time you're looking for a delicious and easy seafood dish, give skillet shrimp scampi a try.
