Time 20m

Yield 4 servings

Number Of Ingredients 4

1 bunch broccoli rabe, trimmed and washed
2 tablespoons extra-virgin olive oil
3/4 teaspoon kosher salt
1/4 teaspoon red pepper flakes

Steps:

  • Prepare a grill or grill pan for medium-high heat.
  • Place the broccoli rabe on a sheet of aluminum foil that is large enough to fold over and seal in the rabe. Drizzle the broccoli rabe with the olive oil and sprinkle with the salt and red pepper flakes. With your hands, toss gently to coat. Fold the foil over the broccoli rabe and crimp all sides to seal. Place the sealed packet on the grill and allow to steam for 8 minutes.
  • Open the packet, being careful not to burn yourself with the steam that escapes. Using tongs, place the broccoli rabe directly on the grill. Cook on the first side until lightly charred in spots, about 2 minutes, then turn over and cook for an additional 2 minutes. Remove to a platter to serve.

  • Bake at 425 for 12 - 15 minutes or til edges are lightly browned and cheese melts.
  • FOR EXTRA FLAVOR: I like to add Italian seasoning/spices to the crust for extra flavor.

Tips:

  • Use a well-seasoned cast iron skillet. This will help the pizza cook evenly and prevent sticking.
  • Don't overcrowd the skillet. Leave enough space between the mushrooms and broccoli rabe so that they can cook properly.
  • Cook the pizza over medium heat. This will help the crust cook through without burning the toppings.
  • Be patient! It takes a few minutes for the pizza to cook through. Don't rush it, or you'll end up with a soggy crust.
  • Top the pizza with your favorite toppings. Some popular options include cheese, pepperoni, sausage, onions, and peppers.
  • Serve the pizza immediately. It's best enjoyed hot and fresh out of the skillet.

Conclusion:

Skillet-fried pizza is a quick and easy meal that's perfect for a weeknight dinner. It's also a great way to use up leftover roasted mushrooms and broccoli rabe. The charred broccoli rabe pesto adds a delicious depth of flavor to the pizza. This recipe is sure to become a favorite in your household.
