Time 30m

Number Of Ingredients 14

2 tbsp (30g ) unsalted butter
1 tbsp olive oil
1 onion (, finely chopped)
2 garlic cloves (, minced)
500g (1 lb) chicken thigh (, cut into bite size pieces (Note 1))
2.5 tbsp flour ((or 1 ½ tbsp. cornflour / cornstarch))
2 cups (500 ml) milk ((any, I use low fat))
2 cups (500 ml) chicken broth
1 1/4 cups (225g) long grain white rice (, uncooked (Note 2))
1 tsp dried thyme (or other herb of choice)
Salt and pepper
1 large head of broccoli, broken / cut into small florets (~400 - 500g / 14 oz - 1 lb) ((Note 3))
2 cups (200g) shredded mozzarella or cheddar ((or other cheese of choice) (Note 4))
Finely chopped parsley (, optional garnish)

Steps:

  • Melt butter and heat oil in a pot over high heat. Add onion and garlic, cook for 1 minute. Add chicken and cook until it changes from pink to white. (Note 5)
  • Turn stove DOWN to medium. Add flour and stir for 1 minute.
  • Add half the milk, stirring as you go, and once incorporated into the flour add the rest of the milk and stir.
  • Add broth, rice, thyme and a just pinch of salt and pepper.
  • Stir, bring to simmer, then cover. Turn down to medium low and cook for 12 minutes.
  • Remove lid - there should still be liquid on the surface. Working quickly, add broccoli, push down so it's partly submerged, cover and cook for a further 3 minutes until broccoli is just cooked.
  • Preheat grill/broiler. Remove lid and stir through half the cheese - don't worry if it looks a bit too saucy, excess liquid gets sucked up in minutes (see video). Smooth surface, top with remaining cheese. Grill/broil until melted (or just put lid on and allow to melt with residual heat on turned off stove).
  • Serve immediately, garnished with parsley if desired.

Tips:

- Ensure your skillet is sufficiently large to accommodate all the ingredients without overcrowding. This will facilitate even cooking and prevent the rice from clumping together. - To achieve tender, flavorful chicken, marinate it in a mixture of soy sauce, ginger, garlic, and sesame oil for at least 30 minutes before cooking. Alternatively, you can use a store-bought marinade of your choice. - When searing the chicken, resist the urge to overcrowd the skillet. Allow ample space between each piece to promote even browning and prevent steaming. If necessary, cook the chicken in batches to ensure proper browning. - Utilize high-quality, long-grain rice for optimal results. Jasmine or basmati rice are excellent choices due to their distinct flavor and fluffy texture. Rinse the rice thoroughly before cooking to remove excess starch, preventing it from becoming gummy. - To achieve a crispy, slightly browned rice crust, press the rice down firmly into the skillet before adding the chicken and broccoli. This will create a golden-brown layer of crispy rice that adds texture and flavor to the dish. - Broccoli florets should be cut into bite-sized pieces to ensure even cooking. For a more vibrant color and texture, blanch the broccoli florets in boiling water for 1-2 minutes before adding them to the skillet. - Adjust the amount of soy sauce and oyster sauce based on your preferred taste. Start with a smaller quantity and gradually add more until you achieve the desired flavor balance.

Conclusion:

This versatile skillet chicken broccoli rice casserole emerges as a culinary masterpiece, seamlessly blending tender chicken, vibrant broccoli, and fluffy rice in a flavorful sauce. This dish offers a delectable combination of textures, ranging from the crispy rice crust to the tender chicken and crisp-tender broccoli. With its easy preparation and customizable flavors, it caters to a wide range of preferences, making it an ideal weeknight meal or a crowd-pleasing dish for gatherings. The use of a single skillet for cooking and baking simplifies the process, reducing cleanup and streamlining the cooking experience. Whether served as a standalone dish or accompanied by a side salad, this skillet chicken broccoli rice casserole guarantees a satisfying and delicious culinary experience.
