APPLE GINGERBREAD SKILLET CAKE

Apple Gingerbread Skillet Cake image

This gingerbread recipe came from my grandmother, and we always ate it with warm applesauce. I adapted it into a one-pan dessert by layering the apples around the bottom of a cast-iron skillet and topping them with the gingerbread batter. The skillet creates a wonderfully thick crust on the gingerbread. -Mary M. Leverette, Columbia, South Carolina

PEACH UPSIDE-DOWN SKILLET CAKE WITH BOURBON WHIPPED CREAM

Peach Upside-Down Skillet Cake With Bourbon Whipped Cream image

A lush combination of a Southern upside-down cake and a French tarte tatin, this cake is deeply caramelized on top and light and fluffy beneath. The chef Virginia Willis, who put the recipe together, uses a whole vanilla bean, but if you don't feel like making that investment, a teaspoon of strong pure vanilla extract is fine. She uses a well-seasoned cast-iron skillet, but a heavy nonstick one would work too. The whipped cream is optional, as is the bourbon that brightens it; you can add vanilla, confectioners' sugar or both if you prefer.

Categories     cakes, dessert

Time 1h15m

Yield 8 servings

Number Of Ingredients 12

4 medium peaches (about 1 1/2 pounds/680 grams), unpeeled and cut into 1/3-inch-thick wedges
Juice of 1 lemon
1 cup/130 grams cake flour, not self-rising
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1 cup/200 grams granulated sugar
5 ounces/140 grams unsalted butter (1 stick plus 2 tablespoons), at cool room temperature
1 vanilla bean, split and seeds scraped, or 1 teaspoon pure vanilla extract
2 large eggs
1/2 cup sour cream
1/2 cup heavy cream
1 tablespoon bourbon

Steps:

  • Heat oven to 350 degrees. Line a rimmed baking sheet with a nonstick baking mat or parchment paper. (This is in case the cake bubbles over during baking.)
  • In a large bowl, toss the peaches with the lemon juice. In a separate bowl, whisk together the flour, baking powder and baking soda.
  • In a 10-inch cast-iron skillet, cook 1/4 cup of the granulated sugar over medium heat, stirring occasionally with a wooden spoon, until the sugar melts and turns a deep amber color, about 10 minutes. Remove from the heat and immediately add 2 tablespoons of the butter, stirring vigorously. The mixture may appear curdled and broken; don't worry, it will smooth out. Arrange the peach wedges in concentric circles over the sugar mixture, overlapping as needed to make them fit.
  • In a stand mixer fitted with the paddle attachment, beat the remaining sugar, butter and the vanilla bean seeds (or vanilla extract) on medium speed until smooth. Add the eggs one at a time, beating until blended after each addition. Add the sour cream and beat until blended. With the mixer running on low speed, gradually add the flour mixture, beating just until blended and stopping to scrape bowl as needed. Spoon the batter over the peaches in the skillet and spread to cover.
  • Place the skillet on the prepared baking sheet. Bake until golden brown and a tester inserted into the center of the cake comes out clean, 40 to 45 minutes.
  • Make the whipped cream, if desired: In a large bowl, preferably metal, combine cream and bourbon. Refrigerate, along with a metal whisk or mixer attachments, for at least 15 minutes. Once chilled, whip the mixture until it holds soft peaks, 3 to 5 minutes.
  • Let the cake cool in the skillet on a wire rack for 10 minutes. Run a knife around the edge to loosen. If you see liquid around the edges of the skillet, carefully pour off into a measuring cup and set aside. (It's O.K. if you don't have any excess liquid - it all depends on how juicy your fruit is.)
  • Carefully invert the cake onto a serving plate and drizzle with any reserved liquid. Let cool about 10 minutes more, to set. Cut into wedges using a serrated knife and serve, topping each slice with whipped cream if you like.

It is just a good basic recipe--only your imagination limits what you can do with it. It is just a good ole southern recipe and super simple. Awesome with fresh strawberries.

BUTTERMILK SKILLET CAKE WITH PECAN PRALINE TOPPING

Buttermilk Skillet Cake with Pecan Praline Topping image

If you end up purchasing Joy's cookbook....you'll find the recipe on page 113, titled Buttermilk Skillet Cake with Walnut Praline Topping. I happen to not like walnuts, so I automatically swap them out for pecans whenever called for in a recipe. I made the cake in an 8" skillet as instructed. Which overflowed. I think it...

Provided by Danielle Nichols

Categories     Other Sauces

Number Of Ingredients 17

1 1/2 c all purpose flour
3/4 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
6 Tbsp unsalted butter, room temperature
1 c sugar
1 large egg
1 large egg yolk
2 tsp vanilla extract
3/4 c buttermilk
PRALINE TOPPING
3/4 c brown sugar, packed
1/2 c unsalted butter
1/4 c heavy cream
1 pinch salt
1 tsp vanilla extract
1 c pecans, chopped

Steps:

  • 1. Preheat your oven to 375' F. Grease and flour an 8" over safe (ie: cast iron) skillet, along the bottom and up the sides. Joy says a 9" cake pan will work as well. Don't make up your mind yet....please.
  • 2. In a medium bowl whisk together the flour, baking powder, baking soda and salt. Set aside.
  • 3. In another medium bowl, with a stand or hand mixer, cream together the granulated sugar and butter until fully incorporated, about 3 minutes.
  • 4. Add the egg and yolk, one at a time, beating for 1 minute between the two.
  • 5. Beat in the vanilla.
  • 6. Now....with the mixer on low, add half of the flour. Beat until incorporated. Add the buttermilk, and beat again until incorporated. Finally, beat in the remaining flour until almost fully incorporated. Stop beating and continue with a spatula to fully incorporate the flour.
  • 7. Pour / spoon the batter into your prepared pan.
  • 8. Smooth the batter in the pan evenly. (Put a pan on the bottom rack. Just in case.) Bake for 30 minutes until a toothpick inserted in the center comes out clean.
  • 9. While things of unknown magnitude are going on in the oven....you should make the pralines: Combine the brown sugar, butter, cream and salt in a medium saucepan. Bring to a soft boil and let boil for 3 minutes. Keep an eye on it. It likes to get a little rambunctious....just stir it down.
  • 10. After 3 minutes, remove from heat and stir in the vanilla and nuts. Allow to set for about 20 minutes to thicken up a bit.
  • 11. Once the cake is out of the oven, and while it's still warm pour the praline over the whole thing.

UPSIDE-DOWN APPLE CAKE IN CAST IRON SKILLET - MY RECIPE -

I got two of my Mom's cast-iron skillets. In one of them, i make eggs, omeletts, fried chicken, fried vegetables, fried breaded meats, etc. In the other one, i make cakes and desserts because i don't like to mix flavors in the same one. I have made this apple cake in it and it is very good, so am sharing my recipe here. Enjoy it like we do.

  • In a mixer, blend cake mix, 1 stick melted butter, sour cream, dark corn syrup, eggs and ground cinnamon.
  • Beat on low speed for 1 minute. Increase speed to medium and beat 2 minutes longer until creamy.
  • Pour the batter over the top of the apples in the skillet and then place the skillet in the oven and bake at 350ºF. for 40-45 minutes and bake until the cake rises high in the skillet, (it will spring back when lightly pressed with your finger when it's done).
  • Remove skillet and cool cake in the pan for 5-10 minutes and then run a knife around the edges of the cake to loosen it from the sides of the pan and carefully flip upside down onto a serving plate.
  • Cool completely for about 15 minutes and serve warm with vanilla ice cream if you like.
  • I have made this cake with Duncan Hines Caramel flavor cake mix and the taste is excellent, too.
  • NOTE: this cake can also be made in these baking pans. Just prepare the butter, brown sugar and spices in a skillet over the stove and then pour this mixture in the baking pan sprayed with cooking oil, add the apple slices, pour the batter and bake it.
  • Here is a guide to bake the cake in those pan sizes:
  • Pan Size: 13x9 inches - Oven Temp: 350ºF. - Baking time: 30-35 minutes.
  • Pan Size: 9x9 inches - Oven Temp: 350ºF. - Baking time: 35-40 minutes.
  • Pan Size: 8x8 inches - Oven Temp: 325ºF. - Baking time: 50-55 minutes.

CAST IRON SKILLET POTATO CAKE

Cast Iron Skillet Potato Cake image

The thing about trying to cook meals on a budget, they often end up making me feel like I didn't make anything special. Then, I put a call in to my inner chef and realized that with a few ingredients and a little elbow grease, I can make something that feels fancy and exciting without breaking the bank.

Provided by Alex Guarnaschelli

Time 50m

Yield 4 to 6 servings or 1 (9-inch) cake

Number Of Ingredients 4

1 to 1 1/2 sticks unsalted butter
6 large Idaho baker potatoes, washed and peeled
Kosher salt
2 teaspoons dried thyme

Steps:

  • The thing about trying to cook meals on a budget, they often end up making me feel like I didn't make anything special. Then, I put a call in to my inner chef and realized that with a few ingredients and a little elbow grease, I can make something that feels fancy and exciting without breaking the bank.
  • In a small saucepan, melt the butter and bring it to a gentle simmer. Shut off the heat and allow it to sit a minute on the stove. The milk solids should start to sink to the bottom. Slowly pour the butter into a bowl, keeping as much of the white milky liquid as possible in the saucepan. Discard the milk solids; these are prone to burning and by clarifying the butter, the potato cake will be less likely to overbrown. Keep the butter warm on the stove.
  • Using a mandolin slicer or a sharp knife, cut all of the potatoes into thin (1/8-inch thick) slices. Transfer them to a bowl and cover them with 3/4 of the melted butter. Season with a little salt and the dried thyme and toss to coat the potatoes with the butter. Pour the remaining butter in the bottom of the cast iron skillet and swirl it around to coat the bottom and sides.
  • Preheat the oven to 400 degrees F.
  • Remember that the bottom layer with be the top when you unmold this cake so it should be done with extra care. Layer the potatoes, following the edge of the skillet, so they overlap. Start the second circle, closer to the center, of overlapping potato rounds. Continue to make circles with the potatoes until the entire bottom of the skillet is filled with potato rounds in smaller and smaller circles. Fill the skillet with another level layer of potatoes. Sprinkle a touch of salt and make 3 more layers. Press down gently on the potatoes to make sure they are starting to stick together and form a cake.
  • Place the skillet on high heat and cook until the water starts to emerge from the potatoes and you can see the edges browning, 5 to 8 minutes. Place the skillet in the oven and cook, undisturbed, until the potatoes feel tender in the center when pierced with the tip of a knife, 10 to 15 minutes. Remove the skillet and carefully pour off any excess butter or liquid into a bowl. Place the skillet on a flat surface and cover it with a platter larger than the skillet. Carefully turn the platter over in one deft motion. Lift off the skillet and use a large metal spatula to place it back in the skillet so it can brown on the second side. Pour the butter back in and cook in the oven for an additional 5 to 8 minutes. Remove from the oven. Pour off any liquid. Season with salt. Cut into wedges like a pie. Serve immediately in the skillet. Alternatively, lift it out of the skillet and serve on a platter or in slices on individual plates.

PINEAPPLE SKILLET SPONGE CAKE

Pineapple Skillet Sponge Cake image

This is yet another recipe from my dear departed Mother's "new" BH&G Cookbook published in 1937. (I've submitted a couple of others from this treasure.) I've only made it in cast iron so cannot say whether or not another type skillet would work as well. This cake is FABULOUS! That's all I can say!! It is the only cake I've ever made from scratch and I'm still fascinated by the fact that sponge cakes rely solely on the eggs for leavening. Not only is it delicious, but it has a beautiful presentation. LOL! I just asked my DH if he had any comments and he said, "divide equally and share fairly with others"! Thank goodness we don't have any children, the way we act about it!! Sure hope someone else enjoys as well...let me know so I won't think we've gone bonkers :)**

SKILLET NECTARINE CAKE

Skillet Nectarine Cake image

Provided by Food Network Kitchen

Categories     dessert

Time 1h10m

Yield 8 servings

Number Of Ingredients 13

1 1/2 pounds small nectarines (3 or 4), halved and pitted
1 tablespoon unsalted butter, melted
1 tablespoon packed light brown sugar
5 tablespoons unsalted butter, at room temperature, plus more for the skillet
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2/3 cup plus 1 tablespoon granulated sugar
1 large egg, at room temperature
1/4 teaspoon pure almond extract
1/2 cup buttermilk
1 cup cold creme fraiche

Steps:

  • Preheat a grill to medium high and prepare for indirect cooking: For a gas grill, turn off one or two of the center burners. On a charcoal grill, bank the coals to the sides, leaving the center open. Grill the nectarines: Toss the nectarines with the melted butter and brown sugar in a medium bowl. Grill over direct heat until well marked, 2 to 3 minutes per side. Remove to a bowl.
  • Cover the grill and reduce the heat to medium or medium low (the temperature should be 350˚ F to 400˚ F). Prepare the cake: Butter a 10-inch cast-iron skillet. Whisk the flour, baking powder, baking soda and salt in a medium bowl. Beat the butter and 2/3 cup granulated sugar in a large bowl with a mixer on medium-high speed until fluffy, 2 to 3 minutes. Beat in the egg and almond extract until well combined. Reduce the mixer speed to low and beat in the flour mixture in two batches, alternating with the buttermilk.
  • Spread the batter in the prepared skillet. Arrange the nectarines on top, cut-side up. Place the skillet over indirect heat, cover the grill and cook, rotating the skillet halfway through, until the cake is golden brown and a toothpick inserted into the center comes out clean, 40 to 50 minutes. Let cool slightly.
  • Beat the creme fraiche and the remaining 1 tablespoon granulated sugar in a medium bowl with a mixer on medium-high speed until soft peaks form, about 2 minutes. Serve with the cake.

Tips:

  • Choose the Right Skillet: Opt for a well-seasoned cast iron or nonstick skillet for even heat distribution and easy release of the cake.
  • Preheat the Skillet: Ensure the skillet is preheated over medium heat before adding the batter. This helps create a crispy outer layer while keeping the inside moist.
  • Use Fresh Ingredients: The quality of your ingredients directly impacts the flavor of the cake. Use fresh, high-quality ingredients for the best results.
  • Don't Overmix the Batter: Overmixing can result in a tough, dense cake. Mix the batter until just combined, taking care not to overwork it.
  • Cook the Cake Slowly: Patience is key when cooking a skillet cake. Cook it over medium-low heat, allowing it to cook evenly throughout without burning.
  • Flip the Cake Carefully: When the edges of the cake are set and the top is no longer runny, carefully flip the cake using a spatula. Avoid flipping too early, as this can cause the cake to break.
  • Test for Doneness: Insert a toothpick into the center of the cake. If it comes out clean, the cake is done. If not, continue cooking for a few more minutes.
  • Serve Warm or at Room Temperature: Skillet cakes are best enjoyed warm or at room temperature. They can be served with various toppings such as fresh fruits, whipped cream, or ice cream.

Conclusion:

Skillet cakes offer a delightful combination of crispy edges, fluffy interiors, and endless flavor variations. With careful attention to ingredient selection, proper technique, and cooking time, you can create delicious skillet cakes that will impress your family and friends. Experiment with different recipes, toppings, and fillings to find your favorite skillet cake combination.
