Tips:

  • Select high-quality beef: Opt for flank steak, ribeye steak, or sirloin steak for a tender and flavorful result. Ensure the beef is thinly sliced against the grain for optimal tenderness.
  • Tenderize the beef: To enhance the tenderness of the beef, consider marinating it in a mixture of soy sauce, cornstarch, and cooking wine for at least 30 minutes before cooking.
  • Use a well-seasoned wok or skillet: A well-seasoned wok or skillet will help prevent the beef and broccoli from sticking. If you don't have a seasoned wok or skillet, you can season it by heating it over medium heat and adding a thin layer of oil. Swirl the oil around the pan to coat the entire surface.
  • Cook the beef in batches: To ensure that the beef is cooked evenly, cook it in batches. This will prevent the beef from overcrowding the pan and steaming instead of searing.
  • Use high heat: When cooking the beef and broccoli, use high heat to create a nice sear on the beef and tender-crisp broccoli.
  • Add the sauce at the end: To prevent the sauce from burning, add it to the pan at the end of the cooking process. Stir to coat the beef and broccoli evenly.
