1 tablespoon finely grated fresh ginger
2 garlic cloves, minced
1 green onion, minced
2 tablespoons cilantro leaves, minced
1 tablespoon rice wine vinegar
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
2 tablespoons canola oil, divided
1 tablespoon sake (only if an open bottle is nearby)
12 bite-sized sea scallops
Salt and pepper
1/2 cup sesame seeds

Steps:

  • In a small bowl add ginger, garlic, green onion, cilantro, rice wine vinegar, sesame oil, soy, 1 tablespoon of canola oil, and sake. Whisk ingredients together.
  • Place 1 teaspoon of vinaigrette in each soup spoon.
  • Season scallops with salt and pepper.
  • Place sesame seeds on a plate. Pat down top and bottom side of each scallop in sesame seeds.
  • In a saute pan, over medium-high heat add remaining tablespoon oil. When oil is hot, add scallops, placing them sesame-crusted side down. Sear for approximately 1 minute, or until sesame seeds brown. Turn and sear on other sesame-crusted side for 1 more minute. Place 1 scallop in each soup spoon. Serve immediately.
  • * The same serving format can be achieved with only 4 spoons by replenishing each guests spoon for subsequent servings.

1/4 cup honey
1/4 cup unseasoned rice vinegar
2 teaspoons minced peeled fresh ginger
2 teaspoons soy sauce
2 teaspoons chili-garlic sauce*
1 teaspoon oriental sesame oil
1 teaspoon grated orange peel
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh mint
2 tablespoons toasted sesame seeds
Scallops
2 tablespoons peanut oil
1 tablespoon oriental sesame oil
18 medium-size sea scallops, side muscles trimmed
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh cilantro
18 6-inch wooden skewers

Steps:

  • For sauce:
  • Mix first 7 ingredients in medium bowl to blend well. (Can be prepared 1 day ahead. Cover; chill.) Mix in remaining ingredients. Season orange-sesame sauce with salt and pepper.
  • For scallops:
  • Heat peanut oil and sesame oil in heavy large skillet over high heat. Sprinkle scallops with salt and pepper. Add to skillet; sauté until just opaque in center, about 2 minutes per side. Transfer to large bowl. Add mint and cilantro; toss to coat. Thread 1 scallop onto each skewer. Arrange skewers decoratively on platter. Serve with sauce.

2 pounds large sea scallops, rinsed
1/4 cup fresh orange juice
2 tablespoons fresh lime juice
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
1 large bunch fresh thyme
5 small oranges, cut into eighths
20 fresh bay leaves

Steps:

  • Remove small muscle from sides of scallops, and discard. Combine juices, oil, and salt and pepper to taste. Crush a few sprigs of thyme, and add to marinade. Stir in scallops. Marinate in the refrigerator for 1 to 3 hours.
  • Heat a grill or grill pan to medium hot, and place grid 4 inches above coals. Double-skewer scallops, alternating with orange sections. Tuck a sprig of thyme or skewer a bay leaf between each scallop and orange. Lay skewers in a pan, and pour remaining marinade over them.
  • Grill for 2 to 3 minutes on each side, until scallops are opaque and lightly charred. Serve immediately.

1/8 teaspoon freshly ground black pepper
12 large sea scallops (about 10 ounces)

  • In a small bowl stir together sesame seeds, salt, and pepper. Remove tough muscle from side of each scallop if necessary and pat scallops dry. Dip flat sides of each scallop in sesame mixture. In a 12-inch nonstick skillet heat oil over moderately high heat until hot but not smoking and sauté scallops on flat sides until sesame seeds are golden and scallops are just cooked through, about 4 minutes total.

2 scallions, finely chopped

1 teaspoon cornstarch mixed with 1 teaspoon dry sherry or water
1 teaspoon soy sauce
2 tablespoons chopped fresh coriander leaves

Salt and freshly ground white pepper to taste
2 tablespoons olive oil
4 sprigs fresh thyme or 1 teaspoon dried
1 tablespoon chopped fresh rosemary or 2 teaspoons dried
2 teaspoons finely chopped garlic
1/8 teaspoon red pepper flakes
2 tablespoons lemon juice
1/2 cup freshly squeezed orange juice, pulp included
4 tablespoons butter at room temperature
3/4 cup diced and seeded ripe tomatoes
1/4 cup chopped fresh coriander or parsley

Steps:

  • Place the scallops in a mixing bowl with the salt, pepper, olive oil, thyme, rosemary, garlic, pepper flakes and lemon juice. Blend well, and refrigerate for 1 hour.
  • If using wooden skewers, soak the skewers in water for at least 1/2 hour.
  • Meanwhile, place the orange juice in a saucepan, and cook over high heat until it is reduced by half.

1 tablespoon unsalted butter
2 tablespoons minced fresh chives
Cooked couscous, for serving
