Sizzling Sherry Shrimp with Garlic image

This recipe is from Spain. Sherry or lemon juice is not always used, but either one adds a nice contrast to the richness of the oil and garlic. You can easily substitute squid or scallops for the shrimp.

Number Of Ingredients 6

1/2 cup olive oil
2 teaspoons finely chopped garlic
2 teaspoons hot red-pepper flakes
2 teaspoons salt
48 medium shrimp, peeled
Flat-leaf parsley, chopped

Steps:

  • Divide oil, garlic, red-pepper flakes, and salt evenly among 4 earthenware or ceramic flame-proof crocks.
  • One at a time or all at once, heat crocks over high heat until oil sizzles, 1 to 1 1/2 minutes. Add 12 shrimp to each crock, and cook just until pink, about 2 minutes. Immediately remove crocks from heat, sprinkle shrimp with parsley, and serve them still sizzling.

Tips:

  • Use fresh shrimp. Fresh shrimp have a more delicate flavor and texture than frozen shrimp, and they will cook more evenly.
  • Clean the shrimp properly. Devein the shrimp and remove the shells. You can also remove the heads, but this is optional.
  • Marinate the shrimp. Marinating the shrimp in a flavorful mixture of olive oil, garlic, lemon juice, and herbs will add flavor and moisture to the shrimp.
  • Cook the shrimp over high heat. This will help to sear the shrimp and lock in the flavor.
  • Do not overcook the shrimp. Shrimp cook quickly, so it is important to watch them closely to prevent them from becoming rubbery.
  • Serve the shrimp immediately. Sizzling shrimp are best served hot off the pan, garnished with fresh herbs and lemon wedges.

Conclusion:

Sizzling shrimp is a quick and easy dish that is perfect for a weeknight meal. The shrimp are cooked in a flavorful sauce and then served over rice or noodles. This dish is sure to be a hit with your family and friends.
