- Heat a wok until it is very hot, then add the groundnut oil. When it is slightly smoking, add the beef slices and stir-fry for 5 mins or until lightly browned. Remove the meat from the wok and drain well in a colander set inside a bowl. Discard the drained oil.
- Wipe the wok clean and reheat it over a high heat. Add the peppers, and cook for 3-4 mins or until softened. Add the oyster sauce and bring it to a simmer. Return the drained beef slices to the wok and toss them thoroughly with the oyster sauce. Turn the mixture on to a serving platter, top with the spring onions and serve immediately.

Tips:
- Choose high-quality bison steak: Look for meat that is a deep red color with little to no marbling. The meat should also be firm to the touch and have a slight gamey smell.
- Slice the steak against the grain: This will help to tenderize the meat and make it more flavorful.
- Marinate the steak for at least 30 minutes: This will help to enhance the flavor of the meat and make it more tender.
- Use a hot skillet or wok: This will help to sear the meat and prevent it from sticking.
- Cook the steak to your desired doneness: Bison steak can be cooked rare, medium-rare, medium, or well-done. The cooking time will vary depending on the thickness of the steak and your desired doneness.
- Serve the steak immediately: Bison steak is best served hot off the grill or skillet. You can garnish it with fresh herbs, such as parsley or cilantro, or serve it with a dipping sauce, such as chimichurri or horseradish sauce.
