8 ounces uncooked Shell Pasta ((or other small pasta))
1 TBS Olive Oil
1 small Yellow Onion (- finely chopped (about 1 ¾ cup))
1 small Red Bell Pepper (- finely chopped (about 1 cup))
1 pound Ground Italian Sausage (- sweet, mild or hot (SEE NOTES))
2 cloves Garlic (- minced)
1 ¼ tsp Italian Seasoning
1 TBS All-Purpose Flour
1/3 cup EACH: White Wine & Low-Sodium Chicken Broth ((or 2/3 cup of broth only))
2 Cups Heavy Cream
½ Cup Freshly Grated Parmesan Cheese (- plus more for garnish)
Kosher Salt & Ground Black Pepper (- to taste)

Steps:

  • Cook pasta: In a large pot of boiling salted water, cook pasta according to al dente package instructions. Drain well and set aside.
  • While pasta cooks, sauté vegetables: In a large, deep skillet heat 1 tablespoon of oil over medium heat. When oil shimmers, add the onion and bell pepper. Cook, stirring occasionally until vegetables are almost softened, about 3-4 minutes.
  • Add sausage and season: Increase heat to medium-high. Add the sausage to the pan along with the Italian seasoning. Season with ½ teaspoon salt and ¼ teaspoon pepper. Steps:

  • Cook sausage and onion in a large skillet until no pink remains. Drain fat.
  • Add bell pepper and garlic, cook 2-3 minutes or until pepper begins to soften.

6 good-quality sausages
140g sun-dried tomatoes
4 tbsp oil from the sun-dried tomato jar
a generous handful of fresh parsley , coarsely chopped

Steps:

  • Cook the pasta in boiling salted water according to the packet instructions or until tender.
  • Peel the skins off the sausages and chop the sausage meat into small hazelnut-sized pieces. Chop the sun-dried tomatoes into small chunks. Heat a tablespoon of the sun-dried tomato oil in a large frying pan (big enough to take the pasta later) and sizzle the sausage pieces for 8-10 minutes, stirring occasionally, until they're crumbly and golden. 2 cups grape or cherry tomatoes, cut lengthwise in half
1/4 cup chopped fresh or 1 tablespoon dried basil leaves

Pinch of red-pepper flakes, plus more for serving (optional)
1 (28-ounce) can whole peeled tomatoes with their juices
1 (14-ounce) can crushed or strained tomatoes
2 bay leaves
Kosher salt
12 ounces dried pasta, such as small shells, farfalle or other shaped pasta
8 ounces fresh mozzarella, torn into bite-size pieces
6 ounces whole-milk ricotta (about 3/4 cup)
1/3 cup grated Parmesan
1/4 cup basil leaves

Steps:

  • Heat oven to 425 degrees. Heat oil in a 12-inch ovenproof skillet over medium-high. Crumble sausage into skillet, using a spoon to break it into small pieces. Cook until starting to brown, stirring occasionally, 5 to 7 minutes. Stir in garlic, oregano, fennel seeds and red-pepper flakes (if using), and cook another 1 to 2 minutes.

  • Top pasta with remaining mozzarella and dollops of ricotta. Sprinkle with Parmesan, then transfer to oven. Bake until pasta is tender when poked with a fork, and cheese is bubbly and lightly golden, 18 to 22 minutes. (If you'd like a more deeply browned topping, run the pan under the broiler for 1 or 2 minutes.) Remove from oven and let cool slightly before serving. Top with basil, plenty of black pepper, and more red-pepper flakes, if you like.
