Steps:

  • Preheat an outdoor grill for high heat.

2 teaspoons olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat oven on broiler setting. Make foil 'snake' out of aluminum foil to use to keep oven door slightly ajar so that broiler won't turn off if it gets too hot. Brush steak with oil and salt and pepper, to taste. Place a piece of foil on the bottom rack as a drip pan. Place another rack in the position above this and put the steak directly on this rack. Cook steak in this position for 5 minutes. Flip steak and cook for another 5 minutes. Move rack with steak to top position in oven, moving rack with foil and drippings just underneath, and cook for 3 minutes. Flip 1 last time and cook for another 3 minutes. 1 1/2 pounds mushrooms, cleaned and sliced
2 cups Marsala wine
1 cup beef stock
1 tablespoon freshly chopped thyme leaves
8 (8 to 10-ounce) New York Strip steaks
Salt and freshly ground black pepper
1/2 cup unsalted butter (1 stick)
1/2 bunch fresh chives, chopped

Steps:

  • Begin the Marsala sauce by heating the olive oil in a large saute pan. Cook the shallots (or onion) and mushrooms gently until they become translucent. Deglaze the pan with the wine and add the stock and fresh thyme. Allow to reduce by two-thirds.
  • Preheat the grill to medium-high heat and season meat on both sides with salt and pepper. Sear the meat on both sides, and grill to about 128 degrees F internal temperature for medium-rare. Remove meat from grill and let rest.

  • Place 12-inch cast-iron skillet under broiler for 2 minutes.

1 bunch fresh parsley, about 2 cups leaves
4 garlic cloves, minced
1 cup olive oil

Steps:

  • Prepare the chimichurri. Combine the parsley and garlic in a food processor and process until finely chopped. 1/4 cup all-purpose flour
1 cup reduced-sodium beef broth
1 beef top sirloin steak (1-1/4 pounds)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1/2 pound sliced fresh mushrooms
1 garlic clove, minced
1/2 teaspoon dried rosemary, crushed
1/8 teaspoon salt
1/4 cup sherry or additional reduced-sodium beef broth
1 tablespoon butter

Steps:

  • In a large skillet over medium-high heat, cook and stir flour for 4-5 minutes or until light tan in color. Immediately transfer to a small bowl; whisk in broth until smooth. Set aside., Sprinkle beef with salt and pepper. In the same skillet, cook beef in oil over medium heat for 5-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove and keep warm., In the same skillet, saute mushrooms until tender. Add the garlic, rosemary and salt; saute 1 minute longer. Stir in the sherry. Stir flour mixture; add to the pan. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in butter until melted. Serve with steak.

1/2 cup all-purpose flour
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 tablespoon mustard powder
2 lbs sirloin steaks
3 tablespoons vegetable oil
2 cups sliced mushrooms
1 onion, peeled and sliced
1 cup red wine
1/4 cup packed brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 (19 ounce) can tomatoes, undrained

Steps:

  • Preheat oven to 325F degrees.
  • In a small dish, combine flour, salt, pepper and dry mustard; transfer to a plastic bag.
  • Cut steak into strips, larger than for stir fry, and place in a large bowl; pour just enough of the red wine onto meat to moisten; reserve remaining wine.
  • In a large skillet over medium-high heat, heat oil.
  • Shake steak strips in flour mixture, then brown floured meat in hot oil; place browned strips in a large casserole dish; you may need more oil to brown all your beef.
  • When done, pour any meat juice/red wine left in bowl steak was in onto browned meat.
  • Add remaining ingredients, including reserved red wine, to casserole and stir to combine.
  • Cover tightly and bake for 1-1/2 to 2 hours, or until steak is tender.

An easy Balsamic-Glazed Sirloin Steak recipe that can be prepared in 45 minutes or less.

3/4 pound 1/2-inch-thick boneless sirloin steak
2 teaspoons sesame seeds
2 teaspoons vegetable oil
2 garlic cloves, minced
1/8 teaspoon dried hot red pepper flakes
3 tablespoons medium-dry Sherry
1 tablespoon soy sauce
2 teaspoons balsamic vinegar
1 teaspoon honey
1 tablespoon cold unsalted butter

Steps:

  • Pat steak dry and season lightly with salt and pepper. Spread 1 teaspoon sesame seeds evenly on one side of steak.
  • In a large heavy skillet heat oil over moderately high heat until it begins to smoke and add steak, sesame-seed-side down. Spread remaining teaspoon sesame seeds on top of steak. Cook steak 1 1/2 minutes on each side for medium-rare meat and transfer with a slotted spatula to a small platter. Keep steak warm.
  • Pour off almost all fat from skillet and add garlic and red pepper flakes. Cook garlic mixture over moderate heat, stirring, 10 seconds and add Sherry. Boil mixture until almost all liquid is evaporated and remove skillet from heat. Add soy sauce, vinegar, and honey and bring to a simmer, stirring. Add butter and stir over low heat until incorporated. Spoon glaze over steak.
