3 tablespoons all-purpose flour
1 teaspoon ground cinnamon

6 to 7 cups thinly sliced peeled tart apples
1 tablespoon lemon juice
Dough for double-crust pie
1 tablespoon butter
1 large egg white
Additional sugar

Steps:

  • Preheat oven to 375°. In a small bowl, combine sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. 6 cups apples, sliced and peeled
3/4 cup sugar
2 tablespoons flour
1 teaspoon cinnamon

2 tablespoons butter

12 tablespoons (1 1/2 sticks) very cold unsalted butter
3 cups all-purpose flour
1 teaspoon kosher salt

6 to 8 tablespoons (about 1/2 cup) ice water
