As we did so, we quibbled about the portions we'd each have. Somehow, it seems she always managed to get more! We still can't get enough of this salad. -Doris Natvig, Jesup, Iowa

Tips:

  • Choose the freshest and most tender lettuce you can find. Look for heads that are tightly packed and have no signs of wilting or bruising.
  • Wash the lettuce thoroughly before using. Remove any outer leaves that are damaged or discolored.
  • Use a large skillet or wok to wilt the lettuce. This will help to ensure that the lettuce cooks evenly.
  • Heat the oil over medium-high heat before adding the lettuce. This will help to prevent the lettuce from sticking to the pan.
  • Cook the lettuce for only a few minutes, until it is just wilted. Overcooking will make the lettuce tough and slimy.
  • Season the lettuce with salt, pepper, and any other desired seasonings. You can also add a splash of vinegar or lemon juice for a bit of tartness.
  • Serve the wilted lettuce immediately as a side dish or as a topping for tacos, sandwiches, or burgers.
