Categories     Fish

Yield 2-4

Number Of Ingredients 7

1- 1 1/2 lb salmon filets
salt
1/2 C dry white wine
1/2 C water
few thin slices onion or 1 shallot sliced
3 sprigs of dill
sprig of parsley

Steps:

  • 1. Sprinkle salmon filets with a little salt. Put the wine, water, dill, parsley, and onions in a sauté pan, and bring to a simmer on medium heat. 2. Place salmon fillets, skin-side down on pan. Cover. Cook 5-10 min., depending on the thickness of the fillet, or to desired done-ness. Sprinkle with freshly ground black pepper.

Tips:

  • Choose the freshest salmon possible. Look for fish that is firm to the touch and has a bright pink color.
  • Use a large pot or poaching pan. The salmon should be completely submerged in the poaching liquid.
  • Bring the poaching liquid to a simmer before adding the salmon. A gentle simmer will help to cook the salmon evenly without overcooking it.
  • Cook the salmon until it is just opaque in the center. This will take about 10-12 minutes per inch of thickness.
  • Remove the salmon from the poaching liquid and let it cool slightly before serving. This will help to prevent the fish from falling apart.

Conclusion:

Poached salmon is a healthy and delicious way to enjoy this versatile fish. It is a great option for a light lunch or dinner, and it can be served with a variety of sides. With just a few simple ingredients and a little bit of time, you can create a delicious poached salmon dish that the whole family will enjoy.
