Time 20m

Number Of Ingredients 10

2 tablespoons olive oil
1 small onion (diced)
1 garlic clove (crushed or finely chopped)
400 g tin chopped tomatoes
1 tablespoon balsamic vinegar
Salt and pepper
A small handful of basil (roughly chopped)
300 g penne pasta (or any shape you fancy)
3 sundried tomatoes
Grated cheddar or parmesan

Steps:

  • Pour the olive oil in a medium saucepan and add the onion. Put on a low heat and sweat the onion, with the lid on, for about 5 minutes, until the onion is softened but not brown. Stir occasionally.
  • When the onion is cooked, add the garlic and cook for 1 more minute, stirring occasionally.
  • Add the tomatoes, balsamic vinegar, salt, pepper and half the basil. Turn the heat up and bring to the boil, then cook for 10-15 minutes on a low heat, stirring occasionally.
  • While the sauce is cooking, cook the pasta according to packet instructions / your own preferences. Add the sundried tomatoes to the pasta to rehydrate.
  • Just before the pasta is ready, hoick out the sundried tomatoes, (I use the point of a sharp knife or a fork) chop finely and add to the sauce.
  • Drain the pasta and stir into the sauce with a couple of tablespoons of pasta cooking water. Serve sprinkled with the cheese and the remaining basil.

TOMATO AND GARLIC PASTA

Tomato and Garlic Pasta image

There is nothing nicer than the flavor of fresh tomatoes. You can use canned, but the trouble you take to prepare this dish is worth it. You prepare the sauce while the pasta is cooking, no long hours of waiting. Great if you want meatless pasta.

Yield 4

Number Of Ingredients 9

1 (8 ounce) package angel hair pasta
2 pounds tomatoes
4 cloves crushed garlic
1 tablespoon olive oil
1 tablespoon chopped fresh basil
1 tablespoon tomato paste
salt to taste
ground black pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Place tomatoes in a kettle, and cover with cold water. Bring just to the boil. Pour off water, and cover again with cold water. Peel. Cut into small pieces.
  • Cook the pasta in a large pot of boiling salted water until al dente.
  • In a large skillet or saute pan, saute the garlic in enough olive oil to cover the bottom of the pan. The garlic should just become opaque, not brown. Stir in the tomato paste. Immediately stir in the tomatoes, and salt and pepper. Reduce heat, and simmer until the pasta is ready; add the basil.
  • Drain the pasta, but do not rinse in cold water. Toss with a couple of tablespoons of olive oil, and then mix into the sauce. Reduce the heat as low as possible. Keep warm, uncovered, for about 10 minutes when it is ready to serve. Garnish generously with fresh Parmesan cheese.
  • VARIATIONS: Saute fresh quartered mushrooms with the garlic, or add shoestring zucchini along with the tomato.

Tips:

  • Use ripe, flavorful tomatoes. This is the most important ingredient in the dish, so make sure you use tomatoes that are at their peak of ripeness. You can use fresh, canned, or even sun-dried tomatoes, but fresh tomatoes will give you the best flavor.
  • Don't overcook the tomatoes. Tomatoes should be cooked until they are softened and juicy, but not mushy. Overcooked tomatoes will lose their flavor and texture.
  • Use a good quality olive oil. Olive oil is another key ingredient in this dish, so make sure you use a good quality oil that has a fruity, flavorful taste.
  • Season the sauce to taste. Once the sauce is cooked, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, garlic, or herbs.
  • Serve the pasta with your favorite toppings. Some popular toppings for tomato pasta include grated Parmesan cheese, chopped basil, and red pepper flakes.

Conclusion:

Tomato pasta is a simple but delicious dish that can be enjoyed by people of all ages. It is a versatile dish that can be served with a variety of toppings and sides. Whether you are looking for a quick and easy weeknight meal or a special occasion dish, tomato pasta is a great option.
