We first sampled this chili-like taco soup recipe at a church dinner. What a warming dish for a cold day. And because it uses packaged seasonings with several cans of vegetables, it's a snap to prepare. -Glenda Taylor, Sand Springs, Oklahoma

QUICK AND SIMPLE TACO SOUP

Quick and Simple Taco Soup image

I like this tasty soup because it is so quick and easy to put together. After work I often don't have energy for anything complicated. The ingredients from this seem to be different from most of the other taco soups listed here. I believe this one originated from Campbells - as you can almost tell by the ingredients :)

Time 20m

Yield 9 cups

Number Of Ingredients 9

1 lb ground beef
1 medium onion
1 small green pepper
1 can beef broth
1 can tomato soup
1 can condensed golden mushroom soup
1 (28 ounce) can pork and beans
1 3/4 cups water
1 package taco seasoning mix

Steps:

  • Brown the beef, onion and green pepper.
  • Pour off fat.
  • Add remaining ingredients.
  • Simmer 10 minutes.
  • Stir often.

Tips:

  • Use fresh, quality ingredients: The better the ingredients, the better the soup will be. Use fresh vegetables, lean ground beef, and a flavorful broth.
  • Don't overcrowd the pot: If you add too much meat or vegetables to the pot, the soup will be too thick and the flavors won't meld together as well.
  • Season to taste: Start with the suggested amount of seasonings, but taste the soup as it cooks and adjust as needed. You may want to add more chili powder, cumin, or salt and pepper.
  • Let the soup simmer: Simmering allows the flavors to meld together and develop. Simmer the soup for at least 30 minutes, or longer if you have time.
  • Serve with your favorite toppings: Taco soup is delicious on its own, but it's even better with your favorite toppings. Try adding shredded cheese, sour cream, guacamole, salsa, or tortilla chips.

Conclusion:

This simple taco soup is a delicious and easy weeknight meal. It's packed with flavor and can be made in just 30 minutes. Serve it with your favorite toppings and enjoy!
