Steps:
- 1. Heat oven to 425°F (220 Celsius). Put flour, baking powder, sugar and salt into a large bowl; stir mix well Add butter and cut in with a pastry blender or rub in with your finger, don't over work some butter bits are ok.
- 2. Add milk and stir with a fork until dough forms. You may need a little more milk depending on the moisture in your flour.
- 3. Form dough into a ball and turn smooth side up. Pat or roll into 2 6 inch circles. Sprinkle generously with cinnamon and sugar,cut each circle into 6 or 8 wedges. place wedges on an ungreased cookie sheet- slightly apart for crisp sides, touching for soft.
- 4. Bake about 12 minutes, or until medium brown on top and bottom.
- 5. Serve warm with jam , whipped cream, butter - what ever combination you like
- 6. Variation - as you're almost done mixing the dough add in some chocolate chips 1/2 -2/3 cup is plenty - I skip the cinnamon if I do this but that's up to you.
IRISH SCONES
Steps:
- Line a baking sheet: Line a rimmed baking sheet with parchment paper.
- Combine the dry ingredients: In a large bowl whisk together the flour, sugar, baking powder, and salt. Set aside.
- Combine the wet ingredients: Measure out 2/3 cup milk. In a medium bowl whisk together about half of the milk, along with the currants and the egg. You will use the rest of the milk later. Set bowl and remaining milk aside.

- Preheat oven to 350 degrees F (175 degrees C).
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add sweet potato, cover, and steam until tender, 8 to 10 minutes. Strain into a bowl and mash until smooth.
- Mix flour and salt together in a large bowl. Cut in butter with a pastry blender or a fork until mixture is crumbly. Stir in sugar, raisins, cinnamon, nutmeg, and allspice. Add 3 cups mashed sweet potatoes; mix until dough comes together.
