From the 2003 cokbook Celebrate! comes this very easy recipe! MOST of the prep time is for the juices to form!

3 cups strawberries (fresh or frozen)
2 tablespoons granulated sugar
1 tablespoon fresh lemon juice

Steps:

  • Hull & rinse berries, then drain them well. Cut berries into 1/2-inch pieces & place in a large bowl. Toss with sugar.
  • Add lemon juice & toss gently, then let stand at room temperature 2 to 3 hours so the juices will form.
  • Cover & refrigerate ~ Best if used within a 24-hour period!

I made this with our french toast this morning and it disappeared fast! You can use this on pancakes as well. I guess you could try it on ice cream, but it would have to cool down first because it is quite hot. Enjoy!

4 cups fresh strawberries, sliced
1/4 cup brown sugar
2 teaspoons vanilla
1/4 cup water (I used water) or 1/4 cup apple juice (I used water)

Steps:

  • Bring all ingredients to a boil in a small saucepan.
  • Turn down heat and gently simmer for at least 10-15 minutes (while you are making your french toast, etc.).
  • Let cool for a few minutes as it is very hot!

1/4 cup granulated sugar
1/2 cup seedless strawberry jam
1/2 cup water
1 teaspoon vanilla extract
1 1/2 tablespoons cornstarch
3 tablespoons warm water

Steps:

  • Whisk together sugar, jam and 1/2 cup water in a small saucepan over medium-high heat until blended.
  • Bring to a boil.
  • Reduce heat to medium, stirring constantly for about five minutes, or until jam melts completely.
  • Simmer 10-15 minutes, until mixture thickens.
  • Stir together cornstarch and 3 tablespoons warm water in a separate bowl until cornstarch is dissolved.
  • Stir cornstarch mixture into jam mixture.
  • Bring to a boil, stirring constantly, then reduce heat and simmer 5-10 minutes.
