Provided by Barney Desmazery

Time 15m

Number Of Ingredients 3

400g strawberries
100g caster sugar
300ml double cream

Steps:

  • Choose four of the best-looking strawberries and set these aside to finish the mousse, then hull and roughly chop the rest. Tip these into a blender or food processor along with the sugar and blitz until smooth.
  • Whisk the cream to stiff peaks. Reserve roughly 4 tbsp of the strawberry purée in a small dish, then fold the rest through the whipped cream until it turns an even shade of pink. Divide the reserved purée between four small serving glasses or ramekins. Spoon the mousse over the top, then chill for at least 1 hr. Will keep chilled for up to a day. Just before serving, halve the reserved strawberries and use these to decorate the mousse.

Tips:

  • Use fresh strawberries. Fresh strawberries will give your mousse the best flavor. If you can't find fresh strawberries, you can use frozen strawberries, but be sure to thaw them completely before using them.
  • Chill your ingredients. Chilling your ingredients will help the mousse set up more quickly and smoothly.
  • Use a food processor or blender. A food processor or blender will make quick work of puréeing the strawberries and whipping the cream.
  • Don't overbeat the cream. Overbeaten cream will become grainy and won't hold its shape well.
  • Chill the mousse before serving. Chilling the mousse for at least 4 hours, or overnight, will allow it to set up properly.

Conclusion:

Strawberry mousse is a light, fluffy, and delicious dessert that is perfect for any occasion. It's easy to make and can be customized to your liking. With these tips, you can make the perfect strawberry mousse every time.
