2 tablespoons olive oil
3 garlic cloves, chopped
1 medium yellow onion, chopped
2 (15 ounce) cans diced tomatoes
1/2 cup fresh basil, chopped
2 sprigs fresh thyme, left whole
2 (15 ounce) cans butter beans or 2 (15 ounce) cans other white beans, drained and rinsed
32 ounces vegetable broth (use less if you like a thicker soup)
salt
black pepper
5 ounces Baby Spinach

Steps:

  • Saute garlic and onion in olive oil until tender.
  • Add tomatoes and herbs and cook until heated through. Season with salt and pepper.
  • Add beans and broth, and cook until soup simmers. Check for seasoning.
  • Just before serving, add spinach a handful at a time, until wilted.
  • Serve--very good with a hunk of crusty bread and a salad.

200 g watercress, washed
200 g Baby Spinach, washed
2 medium potatoes
1 onion
nutmeg
salt and pepper
olive oil
1 bay leaf
2 sprigs fresh thyme or 1/2 teaspoon dried thyme
marjoram
cream (optional)
mixed herbs (optional)

Steps:

  • heat oil in a large pan.
  • Add onions and cook for 3 minutes stirring occasionally till they begin to soften.
  • add the potatoes, water, marjoram, thyme and bay leaf. pinch of salt for taste.
  • bring to boil, reduce heat, cover and cook gently for about 25minutes until the vegetables are tender.
  • remove the bay leaf and herb sprigs.
  • add the spinach and water cress and continue cooking for 3-4 minutes, stirring frequently, just until it is completely wilted.
  • allow the soup to cool slightly, then transfer to blender or food processor and puree until smooth.
  • return the soup to the sauce pan and thin with a little more water, if wished.
  • season to taste with salt pepper and nutmeg.
  • place over a low heat and simmer until reheated.
  • ladle soup into bowls and swirl cream into each bowl(optional).
  • for vegan omit cream.

2 lbs fresh spinach (or frozen, chopped spinach)
8 cups chicken broth
3 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon nutmeg
2 eggs, hardboiled and sliced

Steps:

  • Wash spinach thoroughly; drain and chop coarsely. (If you're using frozen spinach, defrost it and drain thoroughly.).
  • Place a sieve or strainer over a large bowl; set aside.
  • In a large saucepan or soup pot, bring broth to a boil. Add spinach. Simmer 8 minutes, then pour into sieve or strainer, catching the stock in the bowl. Press the spinach with a spoon to remove as much liquid as possible. Set the stock aside. Chop the spinach very fine.
  • Melt the butter in the saucepan or soup pot. Remove pan from heat and stir in the flour. Using a whisk, slowly add the hot broth, mixing well. Return pan to heat and bring broth to a boil, stirring constantly.
