SIMPLE SPELT BREAD RECIPE

Simple Spelt Bread Recipe image

An easy spelt bread recipe, made with 100% whole grain spelt flour, for the perfect sandwich bread. You're just over two hours away from homemade bread, and about 10 minutes of active kitchen time.

Categories     Bread

Time 2h25m

Number Of Ingredients 7

60 ml warm water
2 1/4 teaspoons yeast
1 tablespoon honey or maple syrup
250 ml non-dairy milk
3 tablespoons olive oil
~500 grams whole sprouted spelt flour
1 teaspoon sea salt

Steps:

  • Add the water and honey to a large bowl, or the bowl of your stand mixer. Sprinkle the yeast overtop and let it sit for ten minutes. After ten minutes, it should be foamy. If the mixture doesn't foam, discard - you need new yeast.
  • Add the milk, olive oil, 2 cups (300g) of the flour, and the salt. Stir with a wooden spoon until a loose dough forms.
  • Add the remaining flour 1/2 cup at a time, kneading between each addition, until a smooth, springy dough forms. This should take 6-8 minutes. It should be quite smooth and not really sticky. If you're using a stand mixer, use the dough attachment for this.
  • Place the dough into a large greased bowl and cover with a tea towel or large plate. Let it rise in a warm, draft-free place for one hour, or until doubled in size. This is called proofing.
  • When the dough has risen, punch it down gently and place it into a parchment-lined or well greased standard-size** loaf pan, tucking any untidy ends underneath. Cover with a tea towel and place the loaf into a warm place to rise again for half an hour longer. While it's rising, heat your oven to 180°C (350°F).
  • Bake the bread for about 45 minutes, or until golden, and it sounds hollow when tapped. Remove from the pan and cool for ten minutes on a rack before cutting.
  • Store the bread in a sealed container for up to three days, or freeze for up to a month.

SPELT BREAD

Spelt Bread image

Light and fluffy, this spelt bread won't crumble when you slice or butter it! I had a difficult time finding a recipe that didn't taste like a cardboard brick or crumble when you sliced it. With much experimenting (25 pounds of flour later) this fabulous bread was born! It's so simple it's ridiculous! You won't even taste the vinegar in it!

Time 2h25m

Yield 10

Number Of Ingredients 7

1 (.25 ounce) package rapid-rise yeast
3 cups spelt flour
1 ½ tablespoons white sugar
1 teaspoon salt
1 cup warm water
2 tablespoons cooking oil
¾ teaspoon white vinegar

Steps:

  • Place yeast in the bowl of a stand mixer such as KitchenAid®. Add spelt flour, sugar, and salt, then add water, oil, and vinegar. Mix until ingredients form a dough that pulls away from the bowl.
  • Remove dough from the bowl and shape into a ball. Grease the mixer bowl and place the dough back inside. Flip dough once to make sure its well oiled on both sides. Cover and let rise in a warm place until almost doubled in size, about 45 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Gently transfer dough into a loaf pan and shape to fit; don't tear or punch the dough--this bursts the air bubbles in the bread and it will come out dense. Let rise until doubled in size, about 45 minutes.
  • Bake in the preheated oven until bread is done and the pan makes a hollow sound when you tap on the side, about 30 minutes. Remove from the oven and let cool in the pan for 10 minutes before slicing.

100% SPELT BREAD (BREAD MACHINE) 2LB LOAF

100% Spelt Bread (Bread Machine) 2lb Loaf image

From the UK website www.sharphampark.com converted to Imperial measures and slightly modified. Adjust the yield below to match your bread machine capacity. Personally, I make a 1 lb loaf in a Black & Decker bread machine designed for a 1-1/2 lb loaf. For a slightly different loaf, use 3 1/2 cups spelt flour and 1/2 cup quinoa flour. Note: The rapid bake cycle on my bread machine is approx. 2 hours long. I have noticed that some bread machines have a super rapid cycle of approx. 1 hour. I doubt this recipe would work on a super rapid cycle. (Note on nutrition values: the nutrition values for the spelt flour and almond milk are not included in the nutrition table. It appears Food.com does not have spelt flour and almond milk in their database.)

SPELT BREAD

Spelt Bread image

This is my Grandad's recipe for bread, normally it calls for half white flour and half whole wheat flour, but as my son has a wheat allergy, I substituted both flours for Spelt flour. Spelt flour is an ancient grain and can be used in place of white flour. It can be found in most Health food stores. Enjoy! Editor's Note: Spelt is an ancient wheat that has recently been marketed as safe for wheat-allergic individuals. Wheat-allergic patients can react to spelt as they do to common wheat. Please consult with your health care provider to ensure spelt is appropriate for you.

Tips for Baking Spelt Bread:

  • Use Freshly Milled Spelt Flour: Freshly milled spelt flour has a higher nutritional value and a better flavor compared to store-bought flour. It also absorbs more water, resulting in a more moist and flavorful bread.
  • Proof the Dough Properly: Proper proofing allows the dough to rise and develop its full flavor. Make sure to proof the dough in a warm place until it has doubled in size.
  • Use a Dutch Oven: Baking the bread in a Dutch oven creates a steamy environment, which helps to create a crisp crust and a soft and chewy interior.
  • Score the Dough: Scoring the dough before baking allows the bread to expand properly and helps to create a beautiful crust.
  • Let the Bread Cool Completely: Once the bread is baked, let it cool completely on a wire rack before slicing and serving. This helps to preserve the bread's moisture and flavor.

Conclusion:

Spelt bread is a delicious and nutritious alternative to traditional wheat bread. With its slightly nutty flavor and dense texture, spelt bread is a great choice for sandwiches, toast, or simply enjoying on its own. By following the tips and instructions provided in this article, you can easily bake a perfect loaf of spelt bread at home.
