Yield 4

Number Of Ingredients 13

1 1/2 pounds large shrimp
1 tablespoon fresh parsley
1 tablespoon fresh thyme
1 tablespoon fresh cilantro
1 tablespoon shallot (minced)
3 large garlic cloves (crushed)
1/2 cup butter (melted)
1/4 cup olive oil
3 tablespoons lemon juice (fresh)
Salt (to taste)
Black pepper (to taste)
Garnish: spinach leaves
Garnish: lemon slices

Steps:

  • Gather the ingredients.
  • Peel and devein the shrimp , leaving the tails intact.
  • Mince the fresh parsley, thyme, cilantro , and shallots. Crush the garlic cloves.
  • Combine the melted butter , olive oil, parsley, thyme, cilantro, lemon juice, cloves, shallots, salt, and black pepper in a large bowl.
  • Mix in the shrimp. Marinate at room temperature for 15 minutes or in the refrigerator for 30 minutes. Discard the marinade after the 30 minutes, as it will not be safe to reuse due to contact with the raw shrimp.
  • Prepare the barbecue with medium-hot coals.
  • Thread the shrimp on narrow skewers . Grill until just opaque (or pink in color and firm to touch), about 2 minutes per side.
  • Line a platter with fresh spinach leaves. Arrange the skewers on the platter. Garnish with lemon.
  • Serve and enjoy!

SHRIMP ON THE BARBIE RECIPE - (4.5/5)

Number Of Ingredients 19

Shrimp:
1 lb medium shrimp, peeled & deveined
3 cloves garlic, minced
1/2 cup olive oil
4 Tbsp lemon juice
2 Tbsp green onion, chopped
2 Tbsp parsley, chopped
2 Tbsp cilantro, chopped
1/2 tsp salt
1/4 tsp pepper
Rice:
4 slices thick-cut bacon, coarsely diced
1/2 cup medium red onion, diced
1/2 cup medium red pepper, diced
2 cups long grain white rice
4 cups water
1/2 cup frozen peas
3 Tbsp soy sauce
2 Tbsp cilantro, chopped

Steps:

  • To prepare the shrimp, combine the garlic, olive oil, lemon juice, green onion, parsley, and cilantro in a large bowl. Add the shrimp and toss to coat. Place the shrimp in the fridge, and let them marinate for at least a 1/2 hour, but do not exceed 3 hours. Meanwhile, prepare the rice by sautéing the bacon until it begins to brown in a medium-size sauce pot. Add the onions and the red pepper to the pot and continue to sauté until they begin to soften, about 5 minutes. Stir in the rice and add 4 cups of water. Bring the pot to a simmer and cover. Simmer until the water is absorbed, about 15-20 minutes. To cook the shrimp, place the marinated shrimp onto skewers and preheat your grill to medium heat. When it's reached temperature, place the shrimp skewers onto the grill and cook for about 2 minutes on each side, or until cooked through. When the water for the rice has completely absorbed, fluff lightly, then stir in the peas, soy sauce, and cilantro. Serve with the shrimp.

Tips:

  • Use fresh, large shrimp: This will ensure that the shrimp are cooked evenly and have a plump, juicy texture.
  • Do not overcook the shrimp: Overcooked shrimp will be tough and rubbery.
  • Use a good quality olive oil: This will help to give the shrimp a delicious flavor.
  • Season the shrimp generously: Use a variety of spices and herbs to give the shrimp flavor.
  • Skewer the shrimp: This will help to keep the shrimp from falling through the grates of the grill.
  • Grill the shrimp over medium heat: This will help to prevent the shrimp from burning.
  • Flip the shrimp once during cooking: This will ensure that the shrimp are cooked evenly.
  • Serve the shrimp immediately: Shrimp is best served hot off the grill.

Conclusion:

Shrimp on the barbie is a delicious and easy-to-make dish that is perfect for any occasion. Whether you are grilling for a party or just for yourself, be sure to follow these tips to ensure that your shrimp are cooked perfectly. With just a few simple ingredients and a little bit of time, you can enjoy this classic Australian dish in your own backyard.
