Yield 8

Number Of Ingredients 9

2 cups all-purpose flour
⅓ cup sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
8 tablespoons unsalted butter, frozen
½ cup raisins (or dried currants)
½ cup sour cream
1 large egg

Steps:

  • Adjust oven rack to lower-middle position and preheat oven to 400 degrees.
  • In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.
  • In a small bowl, whisk sour cream and egg until smooth.
  • Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
  • Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.

SIMPLE GOLDEN RAISIN SCONES

Simple Golden Raisin Scones image

This is a recipe that I adapted from one that I found in one of my old cookbooks. It's amazingly easy to make and it tastes so good for being decently low fat. My father (who is British) insists on me making them for him whenever I visit. These are fantastic reheated in the microwave for a few seconds with some whipped cream on the side or spread with butter. Edit: Ahh - I forgot to add the amount of flour needed in the ingredients. Thank you for the review that pointed it out Beansy!

SIMPLE SWEET SCONES

Simple Sweet Scones image

My family loves these scones! In our household this is a go to recipe for a weekend or holiday treat. It's a biscuity style scone, not cakey/ dense or gummy like you get now in many coffee shops. My then 16 year old daughter posted this when she first discovered Recipezaar, it's now 11 years and over 100 5 star reviews later;...

Time 25m

Number Of Ingredients 7

2 1/2 c all purpose flour
1 Tbsp baking powder
1/2 tsp salt
4 oz butter, cold cut into pcs
1/3 c sugar
2/3 c milk
1 Tbsp cinnamon sugar

Steps:

  • 1. Heat oven to 425°F (220 Celsius). Put flour, baking powder, sugar and salt into a large bowl; stir mix well Add butter and cut in with a pastry blender or rub in with your finger, don't over work some butter bits are ok.
  • 2. Add milk and stir with a fork until dough forms. You may need a little more milk depending on the moisture in your flour.
  • 3. Form dough into a ball and turn smooth side up. Pat or roll into 2 6 inch circles. Sprinkle generously with cinnamon and sugar, cut each circle into 6 or 8 wedges. place wedges on an ungreased cookie sheet- slightly apart for crisp sides, touching for soft.
  • 4. Bake about 12 minutes, or until medium brown on top and bottom.
  • 5. Serve warm with jam , whipped cream, butter - what ever combination you like
  • 6. Variation - as you're almost done mixing the dough add in some chocolate chips 1/2 -2/3 cup is plenty - I skip the cinnamon if I do this but that's up to you.

Tips:

  • Use cold butter: Cold butter creates flaky layers in the scones.
  • Don't overwork the dough: Overworking the dough will make the scones tough.
  • Chill the dough before baking: Chilling the dough allows the butter to solidify and create even more flaky layers.
  • Brush the scones with milk or cream before baking: This will give them a golden brown color.
  • Don't overbake the scones: Overbaking will make them dry.

Conclusion:

Scones are a delicious and versatile pastry that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be customized with a variety of flavors. With a few simple tips, you can make perfect scones every time.
