I use the largest chicken breasts for this that I can find, so that they fill up the crock pot. Don't overcook, or you will have shredded chicken instead of chicken breasts.

6 large boneless chicken breast halves
2 Tbsp fresh oregano, chopped
1/4 tsp black pepper, fresh ground
3 Tbsp butter
1 c chicken stock
1/4 c white wine
3 Tbsp lemon juice
2 clove garlic, minced
1 Tbsp minced fresh parsley

Steps:

  • 1. Pat chicken dry with paper towels. Combine oregano and pepper and rub over chicken. In a skillet over medium heat, brown the chicken breasts on each side in the butter. Transfer chicken to slow cooker.
  • 2. Add broth, wine, lemon juice, and garlic to skillet and bring to a boil while stirring. Pour over chicken. Cover and cook on low power for 5 hours. Sprinkle with the parsley and cook an additional 15 minutes. Chicken should reach an internal temperature of 165°.

4 skinless, boneless chicken breast halves
ground black pepper to taste
4 slices Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup milk
1 cup dry bread crumbs
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts in a 9x13 inch baking dish. Season with ground black pepper to taste. Top each breast with a slice of cheese.

1 1/2 teaspoons chicken seasoning (McCormick) or 1 1/2 teaspoons lemon pepper
