"This dish is delicious, foolproof and very low in fat. I prepare it on weeknights when I need a quick supper, but I've also used it for company meals, says Michelle Haerr from Eureka, Illinois. "The Italian tomatoes and lemon-pepper seasoning give the mild fillets a little zest."

SIMPLE ORANGE ROUGHY

Simple Orange Roughy image

This is the only way my daughter will eat fish (so far.) We think it tastes a little like lobster. You could probably use almost any white fish fillets. Sometimes I don't even thaw the fillets. I just rinse them for a minute under warm water. Dry off with a paper towel. Then I broil them for 1 or 2 more minutes on each side. Really fast.

Time 16m

Yield 3-4 serving(s)

Number Of Ingredients 5

lemon juice
margarine, spray or a few tablespoons melted butter
Old Bay Seasoning
2 tablespoons chopped parsley
1 lb orange roughy fillet (or as much as needed)

Steps:

  • Spray a broiler pan with cooking spray.
  • Place fish on the pan.
  • I keep my lemon juice (from a bottle) in a spray bottle (either from salad dressing, or you can buy them from Pampered Chef or culinary stores) I store it in the refrigerator. Spray fish lightly on one side with the lemon juice.
  • Spray fish lightly with the margarine, or spread on some melted butter.
  • Sprinkle lightly with Old Bay Seasoning.
  • Broil about 6 inches from heat for 5 minutes. Turn fish and broil for another 4 - 6 minutes, or until fillets flake easily with a fork.
  • Sprinkle with chopped parsley. Serve.
  • Note: I also keep olive oil in a spray bottle. You could probably substitute olive oil spray for the margarine, but I have not tried this yet.

Tips:

  • Select the freshest orange roughy fillets: Look for fillets that are firm and have a bright, vibrant color. Avoid fillets that are dull or have a slimy texture.
  • Pat the fillets dry: Before cooking, pat the fillets dry with a paper towel to remove excess moisture. This will help the fish to brown more evenly.
  • Season the fillets liberally: Season the fillets with salt and pepper, as well as any other desired spices or herbs. This will help to enhance the flavor of the fish.
  • Use a non-stick skillet: A non-stick skillet will help to prevent the fish from sticking and breaking apart during cooking.
  • Cook the fish over medium heat: Cooking the fish over medium heat will help to prevent it from overcooking and becoming dry.
  • Flip the fillets only once: Flipping the fillets too often can cause them to break apart. Flip the fillets only once, when they are cooked about halfway through.
  • Cook the fish until it is opaque: The fish is cooked when it is opaque and flakes easily with a fork.
  • Serve the fish immediately: Orange roughy is best served immediately after cooking, while it is still hot and flaky.

Conclusion:

Orange roughy is a delicious and versatile fish that can be cooked in a variety of ways. This simple recipe is a great way to enjoy the delicate flavor of orange roughy, and it can be easily customized to suit your own taste preferences. Whether you are new to cooking fish or you are a seasoned pro, this recipe is sure to please everyone at your table.
