1-1/2 cups cold fat-free milk
1 package (1 ounce) sugar-free instant vanilla pudding mix
1/3 cup fat-free sour cream
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed, divided
3 medium firm bananas, sliced
1 reduced-fat graham cracker crust (9 inches)

Steps:

  • In a bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Stir in sour cream until smooth. Fold in 1-1/2 cups whipped topping. , Place half of the banana slices in the crust; top with half of the pudding mixture. Repeat layers. Spread with remaining whipped topping. Refrigerate for 4-6 hours before serving (pie will be soft- set). Refrigerate leftovers.

1/2 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon Kosher salt
2 cups whole milk
4 large egg yolks, lightly beaten
2 teaspoons vanilla extract
One 9-inch prepared graham cracker crumb crust
2 ripe medium bananas, thinly sliced
20 vanilla wafer cookies, plus crumbs for garnishing
1 cup heavy cream
2 tablespoons sugar
1 teaspoon pure vanilla extract

Steps:

  • To make the pudding, in a medium saucepan over medium heat, whisk the sugar, flour, and salt together. Slowly whisk in the milk until combined and smooth and then stir constantly with a wooden spoon until the mixture comes to a low boil and thickens, about 7 minutes. Reduce the heat to very low.
  • While whisking, add about 1/4 cup of the hot milk mixture to the eggs. Whisk the egg mixture into the hot milk and cook, stirring constantly, until the mixture is very thick, 3 to 4 minutes. Remove from the heat and stir in the vanilla. Let stand until room temperature.
