Steps:
- Melt 2 tablespoons of the butter in a large pot such as a Dutch oven over medium-high heat. Add the garlic and shallot, cook for 1 minute, until they begin to soften. Add the mushrooms and cook for about 3 minutes, until tender and browned. Transfer all the contents of the pot to a bowl.
- Add the remaining 1 tablespoon of butter to the pot. Once melted, sprinkle in the flour and whisk it quickly into a paste. Reduce the heat to medium. Add the stock a little at a time, whisking out the clumps between each addition.
- Increase the heat back to medium-high and allow the soup to simmer well for 3 minutes. Add the mushrooms back to the pot and continue to cook for 2 more minutes. The stock will thicken slightly to be somewhat creamy.
- Let cook for 3 to 4 minutes, then ladle into bowls. Garnish with mushrooms and parsley, if desired.

MUSHROOM SOUP WITHOUT CREAM
A delicious broth-based soup that can be modified to your taste! It's close to a Mushroom Soup that I had at a great deli in Florida--I've been trying to duplicate it ever since! I finally found a basic recipe that I was able to modify and this is the result. Great with salad or a sandwich. I hope that you enjoy it! Recommended mushrooms: Shitake, Baby Portobellos & White/Button Mushrooms.

BEST EVER MUSHROOM SOUP
This is a simple but warming soup which tastes so good you will never want tinned again! I learned it at school and have cooked it for years, including at sea for 15 hungry sailors who loved it! This soup is hard to get wrong. Don't skimp on the flour and add a little extra milk if it's too thick. Make sure the flour is all incorporated before adding liquid. Use closed cup, button, chestnut, oyster or mixed mushrooms. Using dark gilled or flat mushrooms will make a darker soup.

Tips:
- Use fresh mushrooms: Fresh mushrooms have the best flavor and texture. If you can't find fresh mushrooms, you can use dried mushrooms, but be sure to rehydrate them before using.
- Sauté the mushrooms before adding them to the soup: Sautéing the mushrooms in butter or oil will help to bring out their flavor and give them a slightly caramelized texture.
- Use a variety of mushrooms: Don't be afraid to experiment with different types of mushrooms. Some good options include cremini, shiitake, and oyster mushrooms.
- Add some aromatics to the soup: Aromatics, such as onions, garlic, and celery, can help to add depth of flavor to the soup. Sauté them in butter or oil before adding them to the soup.
- Use a good quality broth or stock: The broth or stock you use will make a big difference in the flavor of the soup. Use a broth or stock that is made with real bones or vegetables.
- Season the soup to taste: Be sure to season the soup to taste with salt and pepper. You may also want to add other seasonings, such as thyme, rosemary, or sage.
Conclusion:
Mushroom soup is a delicious and versatile soup that can be enjoyed for lunch, dinner, or even breakfast. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy meal, give mushroom soup a try. You won't be disappointed!
