SIMPLE HOT ROAST BEEF SANDWICHES WITH MUSHROOM AU JUS

Simple Hot Roast Beef Sandwiches With Mushroom Au Jus image

This is a quick recipe I came up with because we were just craving a French dip style sandwich. The mushrooms could be left out, but they flavor the au jus so much I dont think I could ever leave them out!

Provided by Candace Michelle

Categories     Lunch/Snacks

Time 30m

Yield 8 samdwiches, 8 serving(s)

Number Of Ingredients 12

2 cups mushrooms, sliced
1 lb roast beef, sandwich meat (we used the thinly sliced deli style)
1 loaf bakery Italian bread (or any other style bread you choose)
8 slices swiss cheese
32 ounces beef broth, divided
1 tablespoon cornstarch
1/2 teaspoon garlic powder
1 teaspoon mccormick garlic and herb seasoning
1/8 cup minced onion
4 tablespoons Worcestershire sauce
2 tablespoons olive oil
salt and pepper

Steps:

  • In a large skillet, saute mushrooms in olive oil. While they are sauteeing, season with garlic, Mccormick's, salt, and pepper.
  • Add beef broth (reserve 1/2 a cup), worcestershire sauce, and onion.
  • In a small bowl, mix 1/2 cup beef broth with cornstarch. Add to the mushroom mixture. Bring to a bowl, then reduce heat and let simmer about 5 minutes.
  • Add roast beef to mushroom au jus and cover, simmering about 10 minutes.
  • Meanwhile, cut your Italian bread into 8 slices. If not already split (sandwich style) go ahead and cut them, so you have 16 total slices of bread.
  • Place bread on cookie sheet. On 8 of the slices (bottom slice) place about 4 or 5 pieces of roast beef on each, then spread mushrooms evenly among each sandwich. Top each sandwich with a slice of swiss cheese.
  • Place sandwiches in oven and broil just until cheese is melted and bread is a bit toasted, about 5 minutes.
  • Serve sandwiches with a side of au jus to dip in!

Provided by Food Network Kitchen

Categories     appetizer

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 8

6 to 8 cups chicken stock
5 ounces dried mushrooms (porcini or other wild dried mushrooms)
2 tablespoons olive oil
4 shallots, minced
2 cups arborio rice
1/2 cup white vermouth
2/3 cup grated Parmesan, plus extra for serving
Salt and pepper

Steps:

  • Heat the stock and ladle 2 cups into a medium bowl. Add dried mushrooms and let soak for 20 minutes, then drain, reserving the liquid. Pour liquid through a fine sieve lined with cheesecloth or paper towels to catch any grit. Add mushroom liquid back to warm stock. Keep stock heated over medium heat. Pat soaked mushrooms dry and saute in a large skillet with 1 tablespoon olive oil.
  • Heat remaining olive oil in a large, heavy saucepan over medium heat. Add shallots and cook until softened. Add rice and cook, stirring, until the rice becomes translucent, about 3 to 5 minutes. Add vermouth and stir until absorbed by rice. Add warm mushroom stock to rice, 1 cup at a time, stirring constantly. All stock must be fully absorbed before the next cup of stock is added. After about 20 minutes, the rice should be tender but not mushy, it should have a creamy texture. Add more stock if needed. Fold in Sauteed mushrooms, Parmesan, and season with salt and pepper. Let stand for a minute before serving. Sprinkle with Parmesan, if desired.

SIMPLE MUSHROOM ROLLS

Simple Mushroom Rolls image

My grandmother made these in the '60s whenever she entertained; imagine my surprise when I found this in a cookbook as an actual recipe! This brought back a ton of memories -- one of them that these were delicious!

Provided by Lennie

Categories     Lunch/Snacks

Time 30m

Yield 6 serving(s)

Number Of Ingredients 3

1 can cream of mushroom soup
1 loaf sliced white bread
1/4 cup melted butter (, you may need more)

Steps:

  • Preheat oven to 400F (200C).
  • Remove crusts from a few bread slices; set crusts aside for another use.
  • Flatten bread slices lightly, with a rolling pin.
  • Spread with undiluted soup, then roll up jelly-roll style and secure with a couple of toothpicks.
  • Keep making slices until you run out of soup.
  • Place rolls on an ungreased baking sheet and brush with melted butter.
  • Bake until bread is toasted, about 10 to 15 minutes-- keep an eye on them.

Tips:

  • Choose the right mushrooms. Fresh, firm mushrooms with a closed cap and no blemishes are best.
  • Clean the mushrooms properly. Use a soft brush or a damp paper towel to wipe away any dirt or debris.
  • Slice the mushrooms evenly. This will help them cook evenly.
  • Don't overcrowd the pan. If you overcrowd the pan, the mushrooms will steam instead of sautéing.
  • Cook the mushrooms over medium-high heat. This will help them brown and caramelize.
  • Season the mushrooms with salt and pepper. You can also add other seasonings, such as garlic, herbs, or spices.
  • Cook the mushrooms until they are tender. This should take about 5-7 minutes.
  • Serve the mushrooms immediately. They are best when served hot.

Conclusion:

Simple mushroom recipes are a great way to enjoy this versatile ingredient. With just a few simple ingredients and a few minutes of cooking time, you can create a delicious and healthy dish that can be enjoyed as a side dish, main course, or even as a snack. So next time you're looking for a quick and easy meal, give one of these simple mushroom recipes a try. You won't be disappointed!
