SIMPLE FRIED RICE

Number Of Ingredients 9

1 medium onion, halved from pole to pole; each half cut into 6 wedges
4 to 6 ounces meat of choice, cooked or raw, cut into bite-size pieces
4 to 6 ounces vegetable of choice, cooked or raw, cut into bite-size pieces
1 large garlic clove, minced
2 large eggs, beaten
4 tablespoons soy sauce
4 tablespoons vegetable oil
4 cups cooked rice
4 scallions, white and green parts, minced

Steps:

  • 1. Set a heavy-bottomed 12-inch nonstick or cast iron skillet over low heat while preparing meat, vegetable, garlic, and eggs. Marinate the meat in 1 tablespoon of soy sauce. Three to four minutes from making the fried rice, increase the heat to high and turn on the exhaust fan.
  • 2. Put 1 tablespoon of oil and the onion in the skillet; stir-fry until the onion is still crisp but starts to turn brown, about 1 minute. Add the raw meat or vegetable; stir-fry until crisp-tender for vegetables or lightly browned for meat, about 1 minute. Add the cooked meat or vegetable; stir-fry until lightly browned, about 1 minute longer. (If both meat and vegetables are raw or cooked, stir-fry the meat first, giving it a little head start.) Stir in the garlic, then transfer the mixture to a plate; set aside.
  • 3. Put the remaining 3 tablespoons oil in the skillet; heat until shimmering. Add the rice; stir-fry, breaking up clumps, until heated through, about 2 minutes. Add the egg; stir until scrambled, about 1 minute. Return the meat/vegetable mixture, along with the remaining 3 tablespoons of soy sauce and the scallions, to the pan and stir to combine. Serve immediately.

SIMPLE HAM (OR PORK) FRIED RICE W/SESAME OIL NO WOK NEEDED

Simple Ham (Or Pork) Fried Rice W/Sesame Oil No Wok Needed image

This is NOT one of the many fried rice recipes that claim to taste just like your local Chinese restaurant. This is just a very tasty, very simple, one skillet fried rice that we have been making for years. The main differences from other recipes seem to be that we use sesame oil to fry the rice, and we do not add soy sauce while cooking. I'm also not going to tell you that you have to let the rice cool before frying. If you can, great, if not, it really doesn't make that big of a difference in this recipe. This is a one-skillet recipe, you do not need to put things in and take them out. It's so much easier this way. I am including pictures on how we scramble the egg in the same pan, I just love this trick! One last suggestion, have everything ready to go when you start, as it comes together very quickly once you start cooking. We always double the batch, my husband mans one skillet and I take the other. Please note, we have done our best to give accurate ingredient amounts, oil may need adjusted depending on your rice. I hope you enjoy this recipe as much as we do.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 11

3 tablespoons sesame oil (may need a splash more to completely coat rice)
1/2 cup sweet onion (finely chopped)
1/2 cup carrot (finely cubed or medium shredded)
1 cup cooked ham (finely cubed) or 1 cup Chinese barbecue pork (finely cubed)
3 cups cooked white rice
2 eggs (beaten)
1/2 cup frozen green pea (thawed)
1/2 cup water chestnut (sliced)
2 green onions (finely chopped)
1 teaspoon sesame seeds
kosher salt

Steps:

  • Preheat large skillet over medium high heat. Add sesame oil.
  • Add sweet onion and carrots. Cook until the carrots are tender, about two minutes.
  • Add the cooked ham (or pork) and combine well.
  • Add the rice, using a wooden spatula or spoon to separate the rice. Cook until the rice is well coated with the oil, adding a splash more oil if needed, but don't over do it or rice will come out oily.
  • Push the rice mixture to the sides of the pan, leaving the center of the pan open to cook the egg.
  • Pour in the beaten egg, cook in the center of the pan until well scrambled. Once the egg is cooked, stir in with the rice mixture.
  • Add the water chestnuts, green onions, peas and sesame seeds. Stir to combine and season to taste with salt.
  • Serve as is, or top with soy sauce, teriyaki sauce or my sons favorite, Recipe #419060, depending on your tastes.

SUPER SIMPLE CHINESE FRIED RICE

Categories     Lunch/Snacks

Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

2 cups day-old cooked white rice
1/4 cup chopped onion
1 large egg, scrambled and diced
1 teaspoon oil
1/2 cup bean sprouts
1/4 cup diced roast pork or 1/4 cup roast chicken
1 -2 tablespoon low sodium soy sauce
salt and pepper

Steps:

  • Sauté the onion in oil (extra yummy if you add a few drops of sesame oil) in a wok for one minute over medium-high heat.
  • Add the remaining ingredients and toss constantly until hot.

Tips:

  • Cook the rice a day ahead. Day-old rice is ideal for fried rice because it's less moist and will fry up better.
  • Prepare your ingredients ahead of time. Chop the vegetables and meat before you start cooking so that you can focus on cooking when you're at the stove.
  • Use a well-seasoned wok or large skillet. A well-seasoned wok will help prevent the rice and ingredients from sticking.
  • Heat the wok or skillet over high heat. This will help create a nice sear on the rice and vegetables.
  • Add the rice and vegetables to the wok or skillet and stir-fry until heated through. Be sure to stir constantly so that the rice and vegetables don't burn.
  • Add the sauce and seasonings and stir-fry until combined. Again, be sure to stir constantly so that the sauce and seasonings are evenly distributed.
  • Serve the fried rice immediately. Fried rice is best enjoyed fresh out of the wok or skillet.

Conclusion:

Fried rice is a delicious and versatile dish that can be made with a variety of ingredients. It's a great way to use up leftover rice and vegetables, and it's also a popular takeout dish. With a little practice, you can easily make fried rice at home that's just as good as (if not better than) what you get from a restaurant.
