EASY AND SIMPLE DEVILED EGGS
My daughter loves these deviled eggs. Nothing complicated just simple and delicious! I believe she could finish off all of them by herself! Which is why I usually double this recipe but this recipe is a single recipe. This is a Pillsbury complete cookbook recipe.

Steps:
- 1. Place eggs in large saucepan, cover eggs with cold water. Bring to a boil. Reduce heat, cover and simmer for about 15 minutes. Immediately drain, run cold water over eggs to stop cooking.
- 2. When eggs are cool, peel the eggs and halve lengthwise. Remove yolks and place in medium bowl. Mash yolk with fork.
- 3. Add all remaining indredients to mashed yolks (except paprika)also add the optional 1 teaspoon of Old Bay if using (my sister, Theresa, uses Old Bay in hers, gives it a nice kick) Mix until light and fluffy, I use my electric handmixer for this.
- 4. You may spoon this mixture into egg white halves with a tablespoon Or I spoon mixture into a quart size plastic baggie with the corner snipped off and squeeze mixture into egg white halves. Less messy lol
- 5. After all egg white halves are filled sprinkle with paprika or Old Bay seasoning. Enjoy!!
SIMPLE AND DELICIOUS DEVILED EGGS
I love deviled eggs and these are so simple to make and delicious. I never bring any home when I take them to potlucks. You can also add a little sweet pickle relish, if you'd like. My hubby doesn't like it, so I don't add it to mine. Enjoy!

- 1. After hard boiled eggs have been peeled and chilled, cut in half lengthwise. Arrange egg whites on a platter and put yolks in a mixing bowl.
- 2. Add mayonnaise, mustard, salt and sugar to the egg yolks and beat until smooth. If mixture seems dry, you may add a little bit more mayonnaise.

Since we had chickens on the farm there were lots of eggs and hence, lots of deviled eggs. This is Grandma'e easy version.

- 1. Place eggs in a large saucepan, cover eggs with cold water, and bring to a boil. Cook 2 minutes. Cover pan and remove from stove. Allow to sit at room temperature until water has completely cooled.
- 2. Peel eggs under cold water and slice in half lengthwise. Carefully remove yolk and place in small mixing bowl. Reserve cooked egg whites. Mash yolks. Add mayonnaise, mustard, salt, and pepper together.
- 3. Optional: Add pickle relish if using. I love the relish and truly believe Grandma made hers this way. However my sister believes this was not in Grandma's recipe.
- 4. Spoon yolk mixture into egg white shells and sprinkle with paprika. Chill and serve cold.
SUPER SIMPLE DEVILED EGGS
Some people like to add cayenne pepper, some like sweet pickles, but this is my favorite way to make these. Note, for easy to peel eggs, don't buy and boil the same day. Let them hang out in the fridge for 2-3 days. I'm not sure why, but it seems to work for me.

- 1. Hard boil the eggs Place 1 dozen eggs in a pan so they all sit on the bottom. Cover with water and bring to a boil. Once boiling, turn off the burner, and cover the pan. Let sit for 20 minutes. After 20 minutes, gently pour off the hot water and cool eggs under running cold water.
- 2. Once eggs have cooled, peel and cut in half.
- 3. Place egg yolks and all the other ingredients into a zipper bag. This makes for the easiest mixing, clean up and it is a piping bag!!
- 4. Squish all the ingredients around in the bag until well mixed. Once well mixed, taste and add salt, pepper or mayo as necessary.
- 5. Squeeze all the mixture into the corner of the bag, cut a small hole in the corner and pipe into each empty white half. Sprinkle with paprika to garnish
- 6. If you are going to a party, don't fill the eggs until you get there. It's much easier that way. Sometimes I add dill pickle. If you choose to, grate, then chop them very fine.
Tips:
- Choose fresh eggs: Older eggs are more difficult to peel and may have a less flavorful yolk.
- Hard-boil the eggs perfectly: Overcooked eggs will have a green ring around the yolk, while undercooked eggs will have a runny yolk.
