1 lb okra, small just top removed
1 lb hamburger
4 tomatoes, chopped
1 onion, chopped
1 teaspoon allspice, ground
1/2 teaspoon cinnamon, ground
3 tablespoons olive oil
5 garlic cloves, thinly sliced

Steps:

  • Mix okra, hamburger, tomatoes, onion, allspice, and cinnamon together.
  • Place mixture in a covered pan.
  • Bake at 350 degrees Fahrenheit for 45 minutes or until done.
  • Meanwhile, for the topping, fry garlic until crisp in olive oil.

1 (16 ounce) package sliced frozen okra (or equivalent in fresh)
1 large sweet onion, thinly sliced
1 (15 ounce) can chopped tomatoes, stewed style if you prefer
salt & pepper

Steps:

  • Heat oven to 375°.
  • Spray a 9X13 Pyrex dish with cooking spray.
  • Layer 1/2 the okra, 1/2 the sliced onion and 1 can tomatoes.
  • Salt and pepper to taste.
  • Repeat.
  • Bake uncovered for 45 minutes.
  • Place oven on "broil" and broil for 5 minutes or to desired doneness.
  • Onions and tomatoes should just start to turn golden.
  • Be creative with your own addition of veggies or seasonings!

1/2 cup Veg oil
1 tbsp of flour
Salt and pepper to taste

1 3/4 cups of Okra
1- 14oz can of chopped tomatoes

  • Saute onion in skillet. Stir in flour salt and pepper. Add water cook until thickened stirring constantly. Layer okra white sauce tomatoes and cheese in greased baking dish. Bake 350 for 35minutes.
