This corned beef is easy to prepare, and is so tasty you'll want to make it often. I like to serve it with Recipe #44013. If there are any leftovers, I slice it thinly and serve with mustard between slices of warm rye bread. Serving sizes will vary depending on the thickness of slices.

1 1/4 lbs corned beef (usually sealed in a plastic bag)
1 cooking onion, sliced
1 bay leaf
2 whole cloves
1/4 teaspoon black peppercorns
3/4 cup water
2 teaspoons yellow mustard
2 tablespoons light brown sugar

Steps:

  • Remove beef from the plastic bag and rinse.
  • Place onion slices in the bottom of the crock pot. Place beef on top.
  • Add bay leaf, cloves and peppercorns.
  • Mix together the water, mustard and sugar. Pour over the beef.
  • Cover, and cook on High for approximately 5 hours.
  • When cooked, remove from the broth and allow to rest (covered loosely with foil) for 15 minutes before slicing.

3 lb corned beef brisket - seasoning packet - rinsed
4 c hot water
2 Tbsp cider vinegar
2 Tbsp sugar
1 bay leaf
1/2 tsp ground pepper
1 or 2 medium onions, cut into wedges
6 medium potatoes, peeled and quartered
6 - 8 carrots, peeled and cut into 1 inch pieces
1 - 1 1/2 lb head of cabbage, cored - cut into wedges
salt & pepper when serving
whole grain mustard for serving - optional

Steps:

  • 1. Combine water, vinegar, sugar and pepper, in the bottom of a 6 quart slow cooker. Mix well. Then place the onion into the water mixture. Add bay leaf. Place the rinsed brisket on top of the onions, sprinkle with seasoning packet. Scatter the potatoes and carrots over the top and along the sides of the brisket. Cover and turn pot to high. Cook for 4 hours.
  • 2. Remove the lid and place cabbage wedges over the top, cover and continue to cook another 3 - 3 1/2 hours or until beef and vegetables are to desired tenderness.
  • 3. Carefully remove the brisket from the pot and cut across the grain. Serve with vegetables on the side, along with the yummy juices and some whole grain mustard. Salt & pepper as desired.
