Time 35m

Yield 12 crepes

Number Of Ingredients 12

1 cup/250 ml milk
1 1/2 ounces/40 g 70-percent dark chocolate
1 tablespoon butter
2 eggs
1/4 cup/55 g sugar
1 teaspoon vanilla extract
1 cup/125 g flour
8 ounces/225 g 70-percent dark chocolate, finely chopped
1 cup/250 ml 35-percent whipping cream
Banana, sliced, for serving
Strawberries, sliced, for serving
Sweetened cinnamon-flecked whipped cream, for serving

Steps:

  • For the crepes: Put the milk, chocolate and butter in a saucepan and heat to melt. Beat the eggs with the sugar in a bowl. Add the vanilla, then the flour. Beat in the chocolate mixture. Strain into a jug and let sit for 30 minutes. Add more milk or water if necessary to give the consistency of thin cream. Fry the crepes in a nonstick pan. If you do not have a nonstick pan use a bit of oil.
  • For the chocolate sauce: Put the chocolate and cream together in a saucepan and heat, gently, until the chocolate has melted and the mixture is very smooth. Thin, as needed with more cream. Serve hot.
  • To serve: Fill the crepes with sliced banana or strawberries and sweetened cinnamon-flecked whipped cream. They look best folded over into a triangle. Drizzle chocolate sauce over top.

Tips for Making Perfect Chocolate Crepes

  • Use the right pan: A non-stick pan is essential for making crepes. It will prevent the crepes from sticking and tearing.
  • Heat the pan properly: The pan should be hot enough before you start cooking the crepes. If the pan is not hot enough, the crepes will not cook evenly.
  • Use a thin batter: The batter should be thin enough to spread easily in the pan. If the batter is too thick, the crepes will be thick and doughy.
  • Cook the crepes for a short time: Crepes should only be cooked for a short time on each side. If you cook them for too long, they will become dry and tough.
  • Be patient: Making crepes takes a little practice. Don't get discouraged if your first few crepes don't turn out perfect. Just keep practicing and you'll soon be a pro!

Conclusion

Chocolate crepes are a delicious and versatile dessert that can be enjoyed for breakfast, lunch, or dinner. They can be filled with a variety of sweet or savory ingredients, making them a perfect option for any occasion. With a little practice, you can easily make perfect chocolate crepes at home. So next time you're looking for a special treat, give this recipe a try.
