2 cloves garlic, chopped
One 8-ounce can tomato sauce
2 tablespoons chili powder
1 teaspoon ground cumin

One 15-ounce can kidney beans, drained and rinsed
One 15-ounce can pinto beans, drained and rinsed

Steps:

  • Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
  • After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.

16 chili peppers, any variety (the hotter the better in our case)

  • finely chop the chili's and garlic.

  • For chili: Brown turkey in a medium-large saucepan. If adding onions or peppers, can cook them at the same time.
  • Add tomatoes (undrained), black and pinto beans, and desired seasonings. Start with a small amount of seasoning and add gradually to avoid "Oh no! It's too spicy!" for you wimps like me. :).

6 garlic cloves, thinly sliced
1 lb ground beef
1 teaspoon ground cumin
1/2 teaspoon chili powder
2/3 cup beef stock
1 (14 ounce) can crushed tomatoes
1 green bell pepper, seeded and diced
1 tablespoon tomato paste
1 teaspoon dried oregano
1 (15 1/2 ounce) can mixed beans or 1 (15 1/2 ounce) can red kidney beans
1 small French bread, loaf thinly sliced
1/2 cup sharp cheddar cheese, grated
salt
pepper

Steps:

  • Heat two tablespoons Oil in a large pan. Cook the Onion until it starts to soften, then add the 3 crushed cloves of Garlic and cook for two more minutes.
  • Stir in the Ground Beef and cook until browned.
  • Add the spices, cook for an additional minute.
  • Reduce heat to simmer. Stir in the Stock, Tomatoes, green Pepper, Tomato Paste and Oregano and simmer for 25 minutes, stirring occasionally.
  • Add the beans and season with salt and pepper to taste.
  • Preheat oven to 375.
  • Transfer the chili to a large gratin or casserole dish.
  • Heat the remaining three Tablespoons of oil, add the 6 thinly sliced cloves of Garlic and cook slowly to soften.
  • Remove from the heat, brush the bread slices, front and back with the oil/garlic mixture.
  • Arrange the treated bread slices on top of the chili.
  • Scatter the remaining oil/garlic slices and the grated cheese over the top of the bread.
  • Bake uncovered for 20 minutes.

These are so good, and so filling. I just love them. And if you don't want the hot dog, just have the delicious chili.I made the recipe myself to my taste, if you find it to sweet just reduce the sugar a bit. Also the chili powder is not spicy as the sugar balances it out.

1 (28 ounce) can stewed tomatoes
1 (398 ml) can beans (i like the maple syrup type, might only be in Canada)
1/2 cup sugar
1 lb hamburger (I use lean)
1/4 cup chili powder
12 hot dogs
12 hot dog buns
1 cup grated cheese (I like cheddar)

Steps:

  • Brown off the hamburger, drain and put aside.
  • Pour stewed tomato into pot, blend with hand blender until smooth.
  • Add hamburger, beans, sugar and chili powder.
  • Stir together.
  • Simmer on medium low for 1 hour.
  • After chili is cooked cook the hot dogs.
  • Put some chili in hot dog bun with cheese, then insert hot dog, then top with more chili and cheese and enjoy.

12 ounces ground beef (80 - 85%)
1 medium onion, chopped
6 (15 ounce) cans chili beans (undrained)
2 1/2 ounces chili seasoning mix, - 2 envelopes of your favorite brand
1/4-1 cup beef broth
garlic powder, chili powder to taste
cheese, if desired as topping

Steps:

  • Stove top:.
  • Brown ground beef and onion in Dutch oven. Drain and rinse under hot water. Return to pot. Add chili beans and seasoning. Add broth to desired consistency - keep in mind that once the chili beans start to warm, the sauce in them will loosen up some, so don't add too much broth at first so it doesn't turn out thinner than you want. Heat for at least 30 minutes.
  • Crock pot:.
  • Brown ground beef and onion in skillet. Drain and rinse under hot water. Combine all ingredients in crock pot. Cook on low 6 or more hours, high for 3 or more hours.

It's quick and simple to make and you can easily adjust it to your personal taste. For a vegetarian version, substitute vegetable broth for the beef broth.

1 bell pepper
1 onion
200 ml beef broth
1 (400 g) can kidney beans
1 (70 g) can tomato paste

  • Chop bell pepper and onion in bite-size chunks.
  • Rinse and drain kidney beans.
  • Heat oil in frying pan and saute bell pepper and onion chunks until lightly browned, about 2 minutes.
