SIMPLE CHEESE SAUCE -- NO LUMPS

Simple Cheese Sauce -- No Lumps image

I'm a bit timid about making a roux and my waistline doesn't really need the extra butter so this simple cheese sauce suits me perfectly. Try it for yourself. Note: The quality of a cheese sauce is all about the cheese. If your cheddar is sharp enough mustard and Worcestershire are unnecessary. If not, then maybe a pinch of the one and a dash of the other would be a good idea.

Tips:

  • Use a dry roux. A dry roux is made by whisking together equal parts flour and butter until the mixture resembles coarse sand. This will help to prevent the cheese sauce from becoming lumpy.
  • Use cold milk. Cold milk will help to prevent the cheese sauce from curdling.
  • Add the cheese slowly. Add the cheese to the milk mixture a little at a time, whisking constantly. This will help to prevent the cheese from clumping together.
  • Cook the cheese sauce over low heat. Cook the cheese sauce over low heat, stirring constantly, until it is thickened and smooth. Do not boil the cheese sauce, as this will cause it to curdle.
  • Season the cheese sauce to taste. Add salt, pepper, and other seasonings to taste. You can also add herbs, such as parsley or chives, for extra flavor.

Conclusion:

This simple cheese sauce is a versatile sauce that can be used in a variety of dishes. It is perfect for macaroni and cheese, grilled cheese sandwiches, and vegetables. It can also be used as a dipping sauce for bread, crackers, or chips. With just a few simple ingredients, you can make a delicious and creamy cheese sauce that the whole family will love.
