Time 45m

Yield Serves 6 as a starter or side dish

Number Of Ingredients 8

1 large or 2 small to medium cauliflowers, broken into florets; or about 6 cups mixed white, orange, green and purple cauliflower
1 to 2 garlic cloves (to taste), minced
1/4 cup chopped flat-leaf parsley
3 tablespoons capers, drained and rinsed
2 to 3 tablespoons white wine vinegar or Champagne vinegar (to taste)
6 tablespoons extra virgin olive oil
Salt
freshly ground pepper

  • In a large bowl, mix together the garlic, parsley, capers, vinegar and olive oil. Season generously with salt and pepper. Add the cauliflower and toss together. Marinate, stirring from time to time, for 30 minutes if possible before serving. Serve warm, cold or at room temperature.

Tips:

  • Choose the right cauliflower. For the best results, look for a cauliflower head that is firm and heavy, with tightly packed florets. Avoid heads that have any brown or yellow spots, as these are signs of spoilage.
  • Cut the cauliflower into bite-sized pieces. This will help the cauliflower cook evenly and absorb the flavors of the dressing.
  • Roast the cauliflower until it is tender. Roasting the cauliflower brings out its natural sweetness and gives it a slightly caramelized flavor. Roast the cauliflower for 20-25 minutes, or until it is tender when pierced with a fork.
  • Make the dressing while the cauliflower is roasting. This will give the flavors time to meld together. In a small bowl, whisk together the olive oil, vinegar, honey, Dijon mustard, salt, and pepper.
  • Toss the roasted cauliflower with the dressing. Once the cauliflower is roasted, transfer it to a large bowl and toss it with the dressing. Be sure to coat the cauliflower evenly with the dressing.
  • Add the pears and walnuts. Once the cauliflower is coated with the dressing, add the pears and walnuts. Toss to combine.
  • Serve immediately. This salad is best served immediately, while the cauliflower is still warm. However, it can also be chilled for later.

Conclusion:

This simple cauliflower and pear salad is a delicious and healthy side dish that can be enjoyed all year round. It is perfect for potlucks, picnics, or weeknight dinners. The combination of roasted cauliflower, sweet pears, crunchy walnuts, and tangy dressing is sure to please everyone at your table.
