This comes from a friend of mine that I have known for years. She made these for me several times. They're simple to prepare and good either for the main meat or for a basic chicken sandwich with lettuce and tomato.

4 chicken breast fillets
4 tablespoons butter
seasoning salt
black pepper
pam cooking spray

Steps:

  • Preheat oven to 350'.
  • Wash chicken fillets and pat dry.
  • In a baking dish, spray Pam well.
  • Place chicken fillets in baking dish.
  • Sprinkle top and bottom with seasoning salt and black pepper, to your own taste.
  • Add 1Tbs. of butter to each chicken fillet, using up the amount of butter stated.
  • Place in oven and bake 30-45 minutes, or until no longer pink.
  • Serve either as a main meat or as a chicken sandwich.

4 chicken breasts, skin on or skin off
1 lemon, ½ finely sliced
2-4 sprigs thyme

  • Heat the oven to 200C/fan 180C/gas 6. Tip a couple of tbsp olive oil into a small roasting tin. Add the lemon slices and then sit the chicken on top. Rub the top of each chicken breast with a little olive oil and then season well. Squeeze over the juice from the remaining lemon half and put the thyme sprigs between the chicken breasts.
