Time 25m

Yield about 3 cups

Number Of Ingredients 7

1 pound tomatillos, husks removed and rinsed
1 serrano chile, stemmed, halved and seeded
1/2 large white onion, peeled and separated
1 1/2 teaspoons grapeseed oil
1 cup packed fresh cilantro with stems
1 1/2 teaspoons kosher salt
1/4 teaspoon xanthan gum

Steps:

  • Position an oven rack 3 inches below the broiler and set the broiler to high.
  • Toss the tomatillos, pepper and onion with the grapeseed oil in a large bowl. Transfer them to a half-sheet pan and broil until blistered and slightly charred, about 7 minutes. (You'll need to give the pan a shake every now and then to ensure even cooking.)
  • Let the charred vegetables cool slightly and then blend them on high with the cilantro and salt until smooth. With the blender still running, add the xanthan gum and blend 10 seconds more.
  • Store tightly covered in the refrigerator for up to 2 weeks. Always serve at room temperature.

AVOCADO SALSA

Fresh tomatillos bring tanginess to this silky avocado salsa, and that acidity keeps the blend green even after days in the fridge. For more heat, double the chiles and keep all their seeds. If you don't have a food processor, you can make this in a blender, but you may need to add a splash of water to purée the ingredients at the start.

1 ripe medium Hass avocado, coarsely chopped

Time 5m

Yield 2 cups

Number Of Ingredients 7

1 avocado, halved and pitted, flesh cut in quarters
2 cups water
1 clove garlic
1/2 shallot
2 tablespoons lemon juice, plus more to taste
Pinch kosher salt, plus more for seasoning
Pinch freshly ground black pepper, plus more for seasoning

Steps:

  • Add all the ingredients to a blender. Put the blender on a low setting and gradually increase the speed. Blend on high for about 20 seconds. Taste the sauce and adjust the flavor by adding more seasoning or lemon juice. Pour the sauce through a strainer into a small bowl. Cover and refrigerate until ready to serve. If you want a warm sauce, gently heat it in a small saucepan over low heat.

Tips:

  • For the smoothest sauce, use very ripe avocados. They should be soft to the touch and have a dark green color.
  • If you don't have lime juice, you can use lemon juice instead. However, lime juice will give the sauce a more authentic flavor.
  • You can add a variety of herbs and spices to the sauce to taste. Some good options include cilantro, parsley, garlic, and cumin.
  • If you want a spicier sauce, you can add a jalapeño pepper or two. Just be sure to remove the seeds before adding the pepper to the sauce.
  • The sauce can be made ahead of time and stored in the refrigerator for up to 3 days. Just be sure to bring it to room temperature before serving.

Conclusion:

Silky avocado sauce is a delicious and versatile condiment that can be used on a variety of dishes. It's perfect for grilled chicken, fish, or vegetables. It can also be used as a dip for chips or vegetables. No matter how you use it, you're sure to enjoy this creamy, flavorful sauce.
