Yield 30

Number Of Ingredients 5

1 1/4 cup butter
10 cloves garlic, minced
30 peeled and deveined large shrimp (21 to 25 per lb)
30 mushrooms, stems removed
3 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Heat the butter and garlic in a skillet over medium heat until the butter begins to bubble. Stir in the shrimp, and cook until they just turn pink, about 3 minutes. Place one shrimp into each mushroom cap, and place into a small baking dish. Spoon the garlic butter into the mushroom caps, and sprinkle each with a pinch of mozzarella cheese. Bake in the preheated oven until the mushrooms are tender and the cheese is golden and bubbly, 10 to 15 minutes.

Tips:

  • Use large shrimp for best results. Shrimp that are too small will be difficult to stuff and may fall apart during cooking.
  • Marinate the shrimp in a mixture of olive oil, garlic, lemon juice, and herbs before stuffing. This will help to flavor the shrimp and keep them moist during cooking.
  • Use a variety of fillings for your shrimp cargo. Some popular options include crab, lobster, scallops, vegetables, and cheese.
  • Be sure to wrap the shrimp cargo tightly in bacon before baking. This will help to keep the filling from falling out and will also add flavor to the shrimp.
  • Bake the shrimp cargo until the bacon is crispy and the shrimp are cooked through. This should take about 20 minutes.

Shrimp cargo is a delicious and easy-to-make appetizer or main course. It is perfect for parties or special occasions.
