Bright, colorful vegetable zoodle (zucchini spirals) tomato sauce dish that is simple and packed with flavor and shrimp... (of course). You most likely keep these ingredients in your pantry and kitchen all the time. Steps:
- Whisk lemon juice, capers, shallot, mustard, and dried red pepper in medium bowl. Whisk in oil, then basil. Season dressing to taste with salt and pepper.
- Bring large saucepan of salted water to boil. Add shrimp and cook 1 minute. Add zucchini; continue cooking until shrimp are opaque in center and zucchini is crisp-tender, about 1 minute longer. Drain. Rinse under cold water and cool. Drain well. Transfer to large bowl. Add 1/3 cup dressing and toss to coat. Season to taste with salt and pepper.
- Toss greens in large bowl with enough dressing to coat. Divide greens among 4 plates. Arrange shrimp and zucchini atop greens. Serve, passing Parmesan cheese separately, if desired.
Tips:
- Use fresh shrimp. Frozen shrimp can be used, but fresh shrimp will give the dish a better flavor and texture.
- Shred the zucchini thinly. This will help it cook evenly and quickly.
- Don't overcook the shrimp. Shrimp cooks quickly, so it's important to watch it carefully and remove it from the heat as soon as it's cooked through.
- Use a large skillet. This will help to prevent the shrimp and zucchini from overcrowding and ensure that they cook evenly.
- Season the dish to taste. Salt, pepper, garlic powder, and onion powder are all good seasonings to start with.
- Serve the dish immediately. Shrimp and zucchini are best served hot and fresh.
Conclusion:
This shrimp and shredded zucchini recipe is a quick and easy weeknight meal that's also healthy and delicious. The shrimp is cooked in a flavorful sauce made with garlic, ginger, and soy sauce, and the zucchini adds a fresh, crunchy texture. This dish is sure to be a hit with your family and friends.
