Sizzling Sherry Shrimp with Garlic image

This recipe is from Spain. Sherry or lemon juice is not always used, but either one adds a nice contrast to the richness of the oil and garlic. You can easily substitute squid or scallops for the shrimp.

Yield 4 to 6 servings

Number Of Ingredients 14

1 pound large shrimp, peeled and deveined, shells reserved
4 cups seafood stock
3 tablespoons good olive oil
2 cups chopped leeks, white and light green parts (3 leeks)
1 tablespoon chopped garlic (3 cloves)
Pinch cayenne pepper
1/4 cup Cognac or brandy
1/4 cup dry sherry
4 tablespoons (1/2 stick) unsalted butter
1/4 cup all-purpose flour
2 cups half-and-half
1/3 cup tomato paste
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Place the shrimp shells and seafood stock in a saucepan and simmer for 15 minutes. Strain and reserve the stock. Add enough water to make 3 3/4 cups. Add the garlic and cook 1 more minute. Add the cayenne pepper and shrimp and cook over medium to low heat for 3 minutes, stirring occasionally. Add the Cognac and cook for 1 minute, then the sherry and cook for 3 minutes longer. Transfer the shrimp and leeks to a food processor fitted with a steel blade and process until coarsely pureed. In the same pot, melt the butter. Add the flour and cook over medium-low heat for 1 minute, stirring with a wooden spoon. Add the half-and-half and cook, stirring with a whisk, until thickened, about 3 minutes. Stir in the pureed shrimp, the stock, tomato paste, salt, and pepper and heat gently until hot but not boiling. Season, to taste, and serve hot. ;

Categories     main-dish

Time 2h10m

Yield 8 servings

Number Of Ingredients 23

2 teaspoons ground cumin
1 teaspoon chili powder, plus more if needed
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt, plus more if needed
24 peeled large shrimp
1/2 cup tequila
2 tablespoons olive oil
1 medium onion, diced
1 small green bell pepper, diced
1 small red bell pepper, diced
3 cloves garlic, minced
4 cups (32 ounces) low-sodium vegetable stock
Two 15-ounce cans black beans, drained and rinsed
One 10-ounce can chopped tomatoes with green chiles, such as Ro*tel
3 tablespoons tomato paste
3 tablespoons cornmeal or masa
Cooking spray or neutral oil, for oiling the grill pan
5 corn tortillas, cut into 2- to 3-inch strips
Diced avocado, for garnish
Diced red onion, for garnish
Sour cream, for garnish
Fresh cilantro leaves, for garnish
Lime wedges, for garnish

Steps:

  • Mix the cumin, chili pepper, garlic powder and salt together in a small bowl. Sprinkle half the mixture over the shrimp in a large bowl along with 1/4 cup of the tequila and 1 tablespoon of the olive oil. Toss to coat the shrimp well. Cover and refrigerate until ready to grill. Reserve the remaining spice mix.
  • Heat the remaining tablespoon olive oil in a pot over medium-high heat. Add the onions and peppers and cook for a few minutes until they begin to soften. Add the garlic and the remaining spice mix and cook for another minute. Add the stock, black beans, chopped tomatoes, tomato paste and 4 cups water. Bring to a boil, then reduce the heat to a simmer. Simmer, uncovered, for 45 minutes.
  • Mix the cornmeal or masa with a small amount of water in a bowl. Pour into the soup, then simmer for an additional 30 minutes. Check the seasonings, adding more chili powder if it needs more spice and more salt if needed. Turn off the heat, add the remaining 1/4 cup tequila and let rest for 15 to 20 minutes before serving.
  • Meanwhile, grill the shrimp: Heat a grill pan over medium-high heat and coat with cooking spray or brush with oil. Shake off any excess marinade and grill the shrimp until cooked through, about 2 minutes per side.
  • Five minutes before serving, gently stir the tortilla strips into the soup.
  • Ladle the soup into bowls. Top each bowl with 3 shrimp and some avocado, red onion, sour cream, cilantro leaves and lime wedges.

SHRIMP IN SHERRY BUTTER SAUCE

Shrimp in Sherry Butter Sauce image

Categories     Shellfish     Shrimp     Curry     Sherry     Simmer     Gourmet

Yield Makes 8 main-course servings

Number Of Ingredients 14

1 tablespoon vegetable oil
3 pounds medium shrimp in shell (31 to 35 per pound), rinsed, peeled, and shells reserved
8 cups water
1 onion, halved, plus 1/2 cup minced onion
1 carrot, halved
1 Turkish or 1/2 California bay leaf
2 fresh parsley sprigs
1 fresh thyme sprig
1/2 teaspoon whole black peppercorns
1 1/2 teaspoons salt
1 1/2 tablespoons all-purpose flour
1 stick (1/2 cup) unsalted butter, cut into tablespoon pieces and softened
1/2 cup medium-dry Sherry
2 teaspoons fresh lemon juice, or to taste

Steps:

  • Heat oil in a 4- to 5-quart heavy pot over moderately high heat until hot but not smoking, then cook shrimp shells, stirring, 1 minute. Add water, onion halves, carrot, bay leaf, parsley, thyme, peppercorns, and salt and simmer, uncovered, 30 minutes.
  • Pour stock through a large sieve lined with a dampened paper towel into a large bowl, discarding solids. Return stock to cleaned pot. Add shrimp and cook over high heat (stock will be hot but not boiling), stirring frequently, until just cooked through, about 2 minutes. Transfer shrimp with a slotted spoon to a large shallow baking pan, spreading in 1 layer to cool quickly. Boil stock until reduced to about 1 1/2 cups, 30 to 40 minutes, then transfer to a bowl.
  • Stir together flour and 1 1/2 tablespoons butter until a paste forms, then set aside. Cook minced onion in 1 tablespoon butter in cleaned pot over moderately low heat, stirring, until softened, about 3 minutes. Add Sherry and boil until liquid is reduced to about 1/3 cup, about 2 minutes. Add shrimp stock and bring to a simmer, then reduce heat to low and whisk in remaining 5 1/2 tablespoons butter until just incorporated. Whisk in flour paste, bit by bit, and simmer sauce, whisking, until slightly thickened, about 2 minutes. Add lemon juice, shrimp, and salt and pepper to taste and cook over moderate heat, stirring, until shrimp are just heated through, about 1 minute.

Tips:

  • Use fresh, high-quality shrimp: Fresh shrimp will have a sweet, briny flavor and a firm texture.
  • Don't overcook the shrimp: Overcooked shrimp will be tough and rubbery. Cook the shrimp just until they turn pink and opaque.
  • Use a good quality sherry: A good quality sherry will add a rich, nutty flavor to the soup. Avoid using cooking sherry, as it is not as flavorful.
  • Add vegetables to the soup: Vegetables such as celery, carrots, and onions will add flavor and nutrition to the soup.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a pinch of cayenne pepper for a little bit of heat.

Conclusion:

Shrimp soup with sherry is a delicious and easy-to-make soup that is perfect for a quick and easy meal. You can use a variety of ingredients to customize the soup to your liking. If you are looking for a flavorful and satisfying soup, then shrimp soup with sherry is a great option.
