- melt 1 T butter in a nonstick pan over medium high heat.
- add shallot, garlic and thyme.
- cook, stirring, till mixture is reduced to about 1/2 cup (toward end of reduction, reduce heat to low and stir frequently).

Divide the pizza dough into 4 equal pieces, and using your hands, stretch each into a 6-inch pizza crust. Place the crusts on the baking sheets. Brush some of the warm scampi juice on each of the dough discs and top with the diced tomatoes. Bake for 15 minutes, rotating the sheets from top to bottom to ensure even cooking. After 15 minutes remove from the oven and divide the shrimp scampi between the 4 pizzas. Top each with mozzarella cheese and put back in the oven for another 3-5 minutes. In a small bowl, toss the Parmesan cheese, lemon zest and arugula. Remove the pizzas from the oven (the crust should be a golden brown). Top each pizza with the arugula mixture and serve.

- With dough hook mix onlow, adding flour slowly until sot ball forms.
- Knead with machine for 3-4 minutes.
- Knead by hand on lightly floured surface to a smooth ball.
- Place dough in a greased bowl (use olive oil).
- Cover and let stand until almost doubled.
- While dough is rising, place garlic on a baking sheet, and drizzle 1 tablespoon oil on each bulb.
- Roast at 375 degree oven until entire bulb is soft (20 minutes).
- Let cool.
- Remove cloves from the husks.
- Mash garlic into a paste.
- Punch down the the dough.
- Stretch to fit a well-oiled 15 inch round deep pizza pan.
