Time 43m

Yield 6 servings

Number Of Ingredients 15

2 pounds (12 to 15 per pound) shrimp in the shell
3 tablespoons good olive oil
2 tablespoons dry white wine
Kosher salt and freshly ground black pepper
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
4 teaspoons minced garlic (4 cloves)
1/4 cup minced shallots
3 tablespoons minced fresh parsley leaves
1 teaspoon minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes

2 tablespoons freshly squeezed lemon juice
1 extra-large egg yolk
2/3 cup panko (Japanese dried bread flakes)
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel, devein, and butterfly the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture.
  • In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined.
  • Starting from the outer edge of a 14-inch oval gratin dish, arrange the shrimp in a single layer cut side down with the tails curling up and towards the center of the dish. Pour the remaining marinade over the shrimp. Spread the butter mixture evenly over the shrimp. Bake for 10 to 12 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges.

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 15

Kosher salt and freshly ground black pepper
1 pound spaghetti
1 stick (8 tablespoons) unsalted butter
1 pound baby bella mushrooms, sliced
1 large shallot, finely chopped
4 cloves garlic, 2 minced and 2 finely grated
1/4 teaspoon crushed red pepper flakes
1 cup dry white wine
1/4 cup all-purpose flour

Juice of 1 lemon

1/4 cup lightly packed flat-leaf parsley leaves, finely chopped

  • Meanwhile, microwave the remaining 4 tablespoons butter in a small bowl until melted, about 1 minute. Stir 2 tablespoons of the melted butter and 1/2 teaspoon salt into the panko in a small bowl; set aside. Toss the remaining 2 tablespoons melted butter with the shrimp, grated garlic, 1/2 teaspoon salt and a few grinds black pepper in a medium bowl. BAKED SHRIMP SCAMPI

Baked Shrimp Scampi image

I've probably been making this recipe since I got it from my Mom in about 1985. I have no idea where she got the recipe from. I've been changing it over the years, and now I call it my own. When we started dating back in 1997, my husband would every now and then order shrimp scampi at a restaurant and always regret it afterwards, saying none of them competed with mine. You can vary the amounts of some of the ingredients, like the cayenne and garlic, to suit your taste. That's what I've done here because we like spicy and garlicky. Yum! Serve over angel hair pasta or any pasta of your choosing.

SHRIMP SCAMPI CASSEROLE

Shrimp Scampi Casserole image

This is by request...Not for anyone on a low fat diet! It's also great as an appetizer for a party, just use small plates and forks to serve it. I don't remember where I got it but I think it might have been on a butter box. (Land-O-Lakes???) My family requests it at every family occasion. I have to tell you that I don't measure everthing in this recipe anymore. Just by eye now and I love garlic so you might go easy on it if your not a huge fan! (FYI, I have butter on the stovetop, a bowl with breadcrumb mix next to it, and casserole dish next to it. Sort of like an assembly line!) Recipe can be halved or quartered!

2 pounds peeled and deveined shrimp (21/25 count), chopped
Splash of white wine
1 lemon, juiced
Freshly ground black pepper
Two 8-ounce packages cream cheese, at room temperature
2 cups whole-milk ricotta

CLASSIC SHRIMP SCAMPI

Classic Shrimp Scampi image

Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

Time 15m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons extra-virgin olive oil
4 garlic cloves, minced
1/2 cup dry white wine or broth
3/4 teaspoon kosher salt, or to taste
1/8 teaspoon crushed red pepper flakes, or to taste
Freshly ground black pepper
1 3/4 pounds large or extra-large shrimp, shelled
1/3 cup chopped parsley
Freshly squeezed juice of half a lemon
Cooked pasta or crusty bread

Steps:

  • In a large skillet, melt butter with olive oil. Add garlic and sauté until fragrant, about 1 minute. Add wine or broth, salt, red pepper flakes and plenty of black pepper and bring to a simmer. Let wine reduce by half, about 2 minutes.
  • Add shrimp and sauté until they just turn pink, 2 to 4 minutes depending upon their size. Stir in the parsley and lemon juice and serve over pasta or accompanied by crusty bread.

Tips:

  • Use fresh shrimp. Fresh shrimp will give your scampi casserole the best flavor. If you can't find fresh shrimp, frozen shrimp will work, but be sure to thaw them completely before using.
  • Cook the shrimp properly. Shrimp cooks very quickly, so it's important not to overcook it. Overcooked shrimp will be tough and chewy.
  • Use a good quality white wine. The white wine you use in your scampi casserole will make a big difference in the flavor of the dish. Choose a dry white wine that you enjoy drinking.
  • Don't skimp on the butter. Butter is what gives scampi casserole its rich, creamy flavor. Don't be afraid to use a generous amount of butter in your recipe.
  • Use fresh herbs. Fresh herbs will add a lot of flavor to your scampi casserole. Use whatever herbs you like, such as basil, thyme, or oregano.
  • Serve scampi casserole immediately. Scampi casserole is best served immediately after it's made. The shrimp will be at its best, and the sauce will be hot and creamy.

Conclusion:

Shrimp scampi casserole is a delicious and easy-to-make dish that's perfect for a weeknight meal. It's also a great dish to serve at a party or potluck. With its creamy sauce, tender shrimp, and flavorful herbs, shrimp scampi casserole is sure to be a hit with everyone who tries it.
