SHRIMP SCAMPI - BROILED

Shrimp Scampi - Broiled image

It's rare to find a recipe where the shrimp is broiled, rather than sauteed these days. But once you try this broiled you will never go back to the skillet. Use the largest shrimp you can get for best results.

Time 16m

Yield 4 , 4 serving(s)

Number Of Ingredients 8

2 lbs shrimp (the larger the better)
1/2 cup olive oil
2 teaspoons garlic cloves, minced
2 tablespoons fresh parsley, chopped
1/8 teaspoon crushed red pepper flakes
1/2 teaspoon dried oregano, crushed
2 tablespoons breadcrumbs
salt & freshly ground black pepper

Steps:

  • Preheat broiler. Butterfly shrimp by cutting partially through the back and "flattening". Rinse and dry with paper towels. In a shallow baking dish toss shrimp with the olive oil to coat, season with salt and pepper to taste, then sprinkle the remaining ingredients over the shrimp.
  • Make sure shrimp is in a single layer in the baking dish. Broil 5 to 6 minutes, until cooked through and opaque. There should be no need to turn shrimp and the edges will probably be a little browned. Spoon any accumulated pan juices over the shrimp and serve.

Tips:

  • Select Fresh Shrimp: Opt for fresh, never frozen, shrimp. Look for firm, translucent shrimp with no off-putting odor.
  • Properly Devein: Devein shrimp by making a shallow cut along the back and removing the dark vein. This eliminates any grit or sand.
  • Season Well: Don't shy away from using bold flavors. Garlic, lemon, butter, and white wine are classic choices that pair well with shrimp.
  • Monitor Cooking Time: Shrimp cooks quickly, so keep a close eye to prevent overcooking and becoming rubbery. A few minutes on each side should suffice.
  • Garnish for Appeal: Before serving, sprinkle some chopped parsley or chives over the shrimp scampi for a vibrant, appetizing look.

Conclusion:

Broiled shrimp scampi is a delightful seafood dish that combines succulent shrimp, aromatic garlic, tangy lemon, and rich butter. Its simplicity allows the natural flavors of the ingredients to shine through, making it a versatile dish that can be enjoyed as an appetizer or main course. With proper technique and attention to detail, you can easily recreate this classic restaurant-style dish in the comfort of your own home. So, gather your ingredients, preheat your broiler, and embark on a culinary journey that will leave your taste buds craving more.
