CLASSIC SHRIMP SCAMPI

Classic Shrimp Scampi image

Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

SUMMER SHRIMP SCAMPI WITH TOMATOES AND CORN

Summer Shrimp Scampi With Tomatoes and Corn image

Shrimp get along well with garlic, butter and lemon, and so do tomatoes and corn. Combine them, and you get a summery shrimp scampi that comes together in one skillet. A searing hot pan helps the tomatoes blister and the corn caramelize before they are coated in a garlic-lemon butter sauce. This is a meal in and of itself, but if you want to serve it with pasta or bread, they'd be welcome additions.

Time 15m

Yield 4 servings

Number Of Ingredients 11

1 pound large shrimp, peeled and deveined
Kosher salt and black pepper
2 tablespoons extra-virgin olive oil
1 pint cherry or grape tomatoes
2 cups fresh or frozen corn kernels (from 4 ears)
5 garlic cloves, minced
1/2 teaspoon red-pepper flakes
1/4 cup dry white wine
2 tablespoons fresh lemon juice (from 1 lemon), plus wedges for serving (optional)
5 tablespoons unsalted butter, cut into 5 pieces
3 tablespoons chopped parsley or chives, or torn basil leaves

Steps:

  • Pat the shrimp very dry and season with salt and pepper. In a large (12-inch) skillet, heat the olive oil over medium-high. Add the shrimp and cook until pink and lightly golden in spots, 1 to 2 minutes per side. Use a slotted spoon to transfer the shrimp to a plate.
  • Add the tomatoes to the skillet, season with salt and pepper, and cook, stirring just once or twice, until they start to blister in spots, 3 to 4 minutes. Add the corn, season with salt and pepper, and cook, stirring just once or twice, until the tomatoes burst and the corn is golden in spots, 3 to 4 minutes.
  • Add the garlic and red-pepper flakes and cook, stirring, until you smell garlic, about 1 minute.
  • Reduce heat to medium, and add the wine and lemon juice, scraping any brown bits from the bottom of the pan. Cook until nearly evaporated, then add the butter and stir until melted. Add the shrimp and its juices and stir until warmed through. (If the sauce breaks and looks greasy, add 1 or 2 teaspoons of water and stir until emulsified.)
  • Remove from heat, add the herbs, season to taste with salt and pepper, and serve with extra lemon for squeezing over, if you like.

SHRIMP SCAMPI

Shrimp Scampi image

Garlicky, buttery shrimp scampi is an Italian-American restaurant staple that takes little more than a skillet and 15 minutes of your time to make at home.

Provided by Lidia Bastianich

Yield 4-6 servings

Number Of Ingredients 11

3 shallots, peeled and chopped (about ½ cup)
7 garlic cloves, crushed and peeled
¾ cup extra-virgin olive oil
2 pounds extra-large or jumbo shrimp, peeled and deveined
4 sprigs fresh thyme
2½ teaspoons kosher salt
2 cups dry white wine
2 tablespoons freshly squeezed lemon juice
6 tablespoons unsalted butter
½ cup chopped fresh Italian parsley
1 tablespoon dry bread crumbs, if needed

Steps:

  • Combine the shallots, five garlic cloves, and 2 tablespoons of the oil in a mini-food processor. Process to make a smooth paste.
  • Pour 6 tablespoons olive oil and the remaining garlic into a large skillet over medium-high heat. Let the garlic sizzle for a minute, then add half of the shrimp and all of the thyme sprigs. Season with ½ teaspoon salt, and cook until the shrimp are seared but not fully cooked, about 1 to 2 minutes. Remove to a plate, and repeat with the remaining shrimp and another ½ teaspoon salt. Remove the shrimp and thyme from the skillet to the plate.
  • Add the remaining 4 tablespoons olive oil and the garlic-shallot paste to the same skillet set over medium heat. Cook, stirring constantly, until the paste has dried out and begins to stick to the bottom of the skillet, about 2 to 3 minutes. Return the thyme to the skillet, and pour in the white wine, lemon juice, the remaining 1½ teaspoons salt, 4 tablespoons of the butter, and 1 cup water. Bring the sauce to a rapid boil, and cook until reduced by half, about 4 to 5 minutes.
  • When the sauce has reduced, whisk in the remaining butter and return the shrimp to the pan. Cook and toss until the shrimp are coated with the sauce and just cooked through, about 2 to 3 minutes. Stir in the parsley. If the sauce still seems too thin, stir in the bread crumbs and bring to a boil just to thicken. Serve immediately.

Tips:

  • Use fresh ingredients: The fresher the shrimp, tomatoes, and herbs, the better your shrimp scampi will taste. Look for shrimp that are firm and translucent, and tomatoes that are ripe and juicy.
  • Don't overcook the shrimp: Shrimp cooks very quickly, so it's important to watch it carefully to avoid overcooking. Overcooked shrimp will be tough and rubbery.
  • Use a good quality olive oil: Olive oil is a key ingredient in shrimp scampi, so it's important to use a good quality oil. Look for an extra virgin olive oil that has a fruity flavor.
  • Add some white wine: White wine adds a delicious flavor to shrimp scampi. Use a dry white wine, such as Sauvignon Blanc or Pinot Grigio.
  • Don't forget the garlic and herbs: Garlic and herbs are essential ingredients in shrimp scampi. Use fresh garlic cloves and a variety of herbs, such as basil, oregano, and thyme.
  • Serve immediately: Shrimp scampi is best served immediately after it is cooked. This will ensure that the shrimp are still hot and juicy.

Conclusion:

Shrimp scampi is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. It can also be served as an appetizer or main course. With its simple ingredients and flavorful sauce, shrimp scampi is sure to be a hit with everyone at your table.
