1/4 pound (1 stick) unsalted butter
2 tablespoons good olive oil
2 tablespoons minced garlic (6 cloves)
2 teaspoons minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2 large lemons
2 pounds (8- to 10-count) shrimp, peeled with the tails on
1 teaspoon coarse sea salt
4 slices country bread, toasted

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
  • Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. 3 cloves garlic, chopped
¼ cup white wine
1 teaspoon Dijon mustard
1 ½ pounds uncooked medium shrimp, peeled and deveined
½ (16 ounce) package dry fettuccine pasta
1 tablespoon chopped parsley, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place bacon in a 12-inch oven-safe skillet over medium heat; cook and stir until browned and crispy, 7 to 8 minutes. Remove bacon, leaving the drippings in the skillet.

1 lemon
3 pounds uncooked medium shrimp, peeled and deveined
1 tablespoon olive oil
1 small onion, chopped
2 ribs celery, chopped
2 cloves garlic, crushed and chopped
salt and ground black pepper to taste
1 sprig fresh rosemary, chopped, or to taste
¼ teaspoon dried basil
¼ teaspoon dried oregano
¼ teaspoon ground coriander
1 bay leaf
¾ cup white wine, or to taste
1 teaspoon Worcestershire sauce, or to taste

Steps:

  • Squeeze lemon over shrimp and set aside.

1 orange, sectioned, seeded (if there are any) and chopped
1 hot red chile, stemmed and chopped
2 scallions, white and green parts, chopped
2 tablespoons chopped fresh cilantro leaves
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
8 large shrimp, shelled and deveined
3 to 4 slices bacon, cut into 2 to 3-inch sections
8 leaves bibb or Boston lettuce

Steps:

  • Preheat the broiler. In a bowl, stir together the chopped orange, chile, scallions, cilantro, olive oil, and salt and pepper.
  • Wrap each shrimp in a section of bacon and secure with a toothpick. Put the shrimp on a baking sheet and broil, turning once, until the bacon is crisp and the shrimp is cooked through, 2 to 3 minutes each side. To serve, lay a lettuce leaf on the cutting board. Remove the toothpick from 1 of the cooked shrimp and center the shrimp on the lettuce leaf. 1 1/2 lbs large shrimp, shelled and deveined, tail sections left on
1 large clove of garlic, sliced thinly
1 1/2 t finely chopped rosemary
1 1/2 t fresh thyme leaves
1 1/2 T EVOO
4 oz bacon, cut into 1 1/2 in. dice
salt and pepper to taste
2 t fresh lemon juice
1/2 C chicken stock
1 1/2 T unsalted butter

Steps:

  • In medium bowl, toss shrimp, garlic, rosemary, thyme and oil. Set aside to marinate at room temperature for 30 minutes. Place bacon in a large skillet and place over med-high heat. Cook bacon, stirring occasionally, until almost all the fat in rendered, 6 to 7 minutes. Pour off and discard all but about 2 T of the bacon fat. Add the shrimp, marinade ingredients and salt and pepper. Saute, turning frequently, until the shrimp are opaque and just cooked through, about 5 minutes. Remove shrimp and bacon, and transfer to a serving dish. Add lemon juice and stock to skillet; cook stirring up cooked-on brown bits. Cook until liquid is reduced by half, about 2 minutes. Swirl in butter, cook until blended. Pour sauce over shrimp. Serve with rice.
