SHRIMP WITH BASIL, GARLIC, AND TOMATOES

Shrimp with Basil, Garlic, and Tomatoes image

Provided by Food Network Kitchen

Categories     main-dish

Time 16m

Yield 4 servings

Number Of Ingredients 6

1 cup quartered cherry or grape tomatoes (about 12)
5 large fresh basil leaves, chopped, plus extra for garnish
Kosher salt and freshly ground black pepper
1 1/2 pounds medium-large shrimp, shelled and deveined
Extra-virgin olive oil
1 large clove garlic, minced

Steps:

  • In a medium bowl, toss the tomatoes with the basil and season with salt and pepper, to taste. Set aside while you prepare the shrimp.
  • Divide the shrimp between 2 (8 or 9-inch) pie pans and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced in the pans.
  • Heat 2 large skillets over medium heat, or do this in 2 batches if you only have 1 pan. Season 1 side of the shrimp with salt and pepper. Add enough oil to lightly film the bottom of the pan and turn the heat up to high. Invert the pan of shrimp so they all fall into the skillet(s) at once. Saute the shrimp, undisturbed, until they turn golden brown on the bottom, about 2 minutes. Add a bit more oil and 1/2 the garlic to each pan. Turn the heat off and turn the shrimp over with tongs. Cook the shrimp for 1 minute in the residual heat of the pans. Transfer the shrimp to the bowl with the tomato mixture and toss to combine. Divide the shrimp among 4 plates or a serving platter and serve hot or at room temperature.

SHRIMP SALAD WITH ZUCCHINI AND BASIL

Shrimp Salad With Zucchini and Basil image

Was checking out an old Bon Appetite annual while thinning out my "Paper and Picture" cookbooks, since I most often use Zaar. The zukes are still coming and the basil is lush, green, aromatic, and beautiful. Everything here is on our go-to list, and the photo was tempting, too. It was suggested that you use packaged baby greens for a quick start.

Tips:

  • Use fresh, high-quality shrimp. This will make a big difference in the flavor of your salad.
  • Cook the shrimp properly. Overcooked shrimp will be tough and rubbery. Cook them just until they are pink and opaque, about 2-3 minutes per side.
  • Chop the shrimp into small pieces. This will make it easier to eat and will help the flavors to blend together.
  • Use a variety of fresh herbs in your salad. Basil is a classic choice, but you can also use cilantro, parsley, thyme, or dill. Fresh herbs will add a lot of flavor and brightness to your salad.
  • Don't be afraid to experiment with different ingredients. You can add vegetables like celery, cucumber, or red onion to your salad. You can also add nuts, seeds, or crumbled cheese. Just be sure to use ingredients that you enjoy and that will complement the shrimp.
  • Dress the salad with a simple vinaigrette. A vinaigrette is a mixture of oil and vinegar, and it is a classic dressing for shrimp salad. You can use any type of oil you like, but olive oil is a popular choice. You can also add a little bit of Dijon mustard, honey, or herbs to your vinaigrette for extra flavor.
  • Serve the salad immediately. Shrimp salad is best when it is fresh. If you need to make it ahead of time, you can store it in the refrigerator for up to 2 days. Just be sure to bring it to room temperature before serving.

Conclusion:

Shrimp salad is a delicious and refreshing dish that is perfect for any occasion. It is easy to make and can be customized to your liking. With its light and tangy flavor, shrimp salad is a great way to enjoy the taste of summer.
