12 ounces large shrimp (about 16), peeled and deveined, tails intact
1 8.8-ounce package thin rice noodles
1/2 head red leaf lettuce, thinly sliced

1 cup roughly chopped fresh cilantro and/or mint

  • Make dressing:
  • In a bowl stir together all dressing ingredients until sugar is dissolved. Chill dressing, covered, 1 hour.
  • Shell and devein shrimp. In a large saucepan of salted boiling water cook shrimp with lemon 2 minutes, or until just cooked through. In a colander drain shrimp and rinse under cold water to stop cooking. Halve shrimp lengthwise.
  • Halve cucumber lengthwise and seed. Cut cucumber halves and scallions crosswise into 2 1/2-inch pieces and cut pieces lengthwise into julienne strips.
  • In a bowl soak noodles in hot water to cover 15 minutes to soften. While noodles are soaking, in a 6-quart kettle bring 3 1/2 quarts salted water to a boil. Drain noodles in colander and cook in boiling water 45 seconds, or until just tender. Drain noodles in colander and rinse under cold water to stop cooking. Drain noodles well and with scissors cut into 4-inch lengths.
  • Divide noodles, shrimp, vegetables, and dressing among 4 bowls and sprinkle with herbs and peanuts. To eat, pull herbs from sprigs and toss with noodles.

1 pound large shrimp, peeled (tail segments left attached) and deveined, patted dry
1 head romaine lettuce, shredded (about 8 cups)
5 radishes, thinly sliced
1 Fresno or jalapeno chile, thinly sliced
1/4 cup hot-pepper jelly or mango chutney, warmed
1 avocado, pitted, peeled, and thinly sliced

Steps:

  • Preheat broiler with rack 6 inches from heating element. Cover noodles with boiling water in a bowl; let stand 10 minutes.

green olives, chopped (any amount desired)
1 small green bell pepper, chopped
1 cup mayonnaise

  • In a large bowl mix together ALL ingredients with the dressing, adjusting salt and pepper to taste.

1/2 cup sliced fresh mushrooms
1/4 cup sliced green onions (4 medium)
1/4 cup shredded carrot
1/4 cup oil
1 teaspoon grated lime peel
2 tablespoons lime juice
1 tablespoon rice vinegar
1 1/2 teaspoons honey
1/2 teaspoon Dijon mustard
6 oz. shelled deveined uncooked medium shrimp (about 12 shrimp), tails removed
1 tablespoon oil
3 cups lightly packed torn romaine lettuce

Steps:

  • Cook rice as directed on package. In medium bowl, combine cooked rice, mushrooms, onions and carrot; mix well. Cover; refrigerate 1 hour or until cool.
  • In small bowl, combine 1/4 cup oil, lime peel, lime juice, vinegar, honey and mustard; mix well. Pour lime mixture over rice mixture; toss gently to coat. Return to refrigerator.
  • Heat gas or charcoal grill. In medium bowl, combine shrimp and 1 tablespoon oil; toss to coat. Let stand at room temperature for 10 minutes to marinate.
  • When grill is heated, place shrimp in grill basket (grill "wok"). Place grill basket on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 4 to 6 minutes or until shrimp turn pink, stirring occasionally.
  • Divide lettuce evenly onto individual serving plates. Gently stir rice mixture; spoon evenly onto lettuce. Top each with shrimp.

1 small box frozen peas
2 cups small cooked baby shrimp
1 1/2 cups celery
1/2 cup green onion
Dressing:
1/2 cup olive oil
3 T red wine vinegar
1/2 T sugar
2 t soy sauce
1 t curry powder
1/2 t celery seed
1/2 t salt

Steps:

  • Cook the rice per instructions Defrost peas Dice celery and green onion Once rice is cooked put in bowl and put in refridgerator to cool (you can add the peas here to defrost them and cool the rice.) Wisk all the dressing ingredients together. Once the rice is cooled add the celery, green onion and shrimp. Pour the dressing over and mix until combined well. Put in the refridgerator again for about 20-30 minutes.

1 pound raw peeled, tail-off shrimp (31 to 40 shrimp per pound), thawed if frozen
1/4 cup fresh lemon juice

2 cups (7 ounces) fresh or frozen okra, sliced 3/4-inch thick (if frozen, do not thaw)
1 large orange or yellow bell pepper, chopped
1/4 cup chopped fresh parsley

Steps:

  • For the Cajun seasoning: Combine the garlic powder, oregano, paprika, allspice, if using, 1 teaspoon salt and 1/2 teaspoon black pepper.
  • For the salad: Combine 1 teaspoon Cajun seasoning with the rice and cook according to the rice package directions. Set aside in a bowl.
  • Meanwhile, in a large microwave-safe bowl, combine the shrimp, lemon juice, oil and 2 teaspoons Cajun seasoning; cover the bowl with plastic wrap, leaving a 1-inch opening for a vent. 1/4 cup fresh lemon juice
