3/4 cup mayonnaise
1/4 cup fresh cilantro, chopped
1/4 teaspoon salt
16 regular size flour tortillas
2 cups monterey jack cheese, shredded

Steps:

  • Combine butter and oil; set aside.
  • Sauté onion, peppers and garlic in 4 TB butter mixture in medium sauté pan on medium heat until tender.
  • Add shrimp, if using raw shrimp, sauté till pink.
  • Remove pan from heat, add next 3 ingredients.
  • Place tortillas on foil lined baking sheets; brush 1 side of each tortilla with remaining butter mix.

2 ripe Haas avocados
1 lime, juiced
A couple pinches salt
1/4 cup sour cream, 3 rounded tablespoonfuls
2 chipotle peppers in adobo, available in cans on specialty food aisle in Mexican section
1/2 pound chorizo sausage, sliced thin on an angle
1 tablespoon extra virgin olive oil, plus some for drizzling
1 clove garlic, cracked away from skin and crushed
12 large shrimp, peeled and deveined, tails removed, ask for easy-peels at fish counter
Salt and freshly ground black pepper
4 (12- inch) flour tortillas
1/2 pound, 2 cups, shredded pepper Jack cheese

Steps:

  • Cut avocados all the way around with a sharp knife. Scoop out the pit, then spoon avocado flesh away from skin into a food processor. Add the juice of 1 lime, a couple of pinches salt, sour cream and chipotles in adobo. Pulse guacamole until smooth. Transfer to a serving bowl.
  • Heat a 12-inch nonstick skillet over medium high heat. Brown chorizo 2 to 3 minutes, then remove from pan. Add oil, garlic, then shrimp. Season shrimp with salt and pepper and cook shrimp until pink, 2 or 3 minutes. Transfer shrimp to a cutting board and coarsely chop.

12 whole large shrimp, peeled, deveined and rinsed clean
2 tablespoons olive oil
1 large onion, coarsely chopped

1 red bell pepper, coarsely chopped
1/3 pineapple, coarsely chopped
2 tablespoons butter, plus more as needed
Twelve 6-inch flour tortillas

  • On a large plate, pour the red sauce over the shrimp and set aside.

Steps:

  • Char bell peppers over gas flame or in broiler until blackened on all sides. Remove from heat. Enclose peppers in paper bag. Let stand 10 minutes. Peel and seed peppers. Cut into 1/4-inch-thick strips. Set aside.

1 (4 ounce) can chopped green chilies
2 cups cooked shrimp
1 cup chopped fresh spinach
1 tablespoon olive oil
1 cup shredded monterey jack pepper cheese
1 cup shredded cheddar cheese
1 tablespoon chopped cilantro
12 flour tortillas (6-inch size)
nonstick cooking spray

Steps:

  • Chop the shrimp. Saute the spinach in the olive oil and set aside. Drain the chilis.
  • Combine the chilis, shrimp, spinach, pepperjack cheese, cheddar cheese, and cilantro.
  • Heat a small skillet over medium heat. Spray one of the tortillas with cooking spray and place, spray side down, in the skillet. Top with 1/6 of the shrimp mixture. Spray another tortilla with cooking spray and place, spray side up, on the shrimp mixture.
  • Cook for about 2 minutes until golden. Gently flip the quesadilla and cook another 2 minutes.
  • Repeat for remaining tortillas.
  • To serve, cut each quesadilla in quarters and serve with sour cream and salsa for dipping.

3 (10 inch) flour tortillas
3 tablespoons remoulade sauce, divided (use whatever kind you like, or substitute mayo)
4 pieces thick-cut bacon, cooked and crumbled
1 -2 tablespoon extra virgin olive oil
1 lb shrimp, peeled
2 garlic cloves, minced
1/2 onion, diced
seafood seasoning (to taste)
1/4 teaspoon pepper
1/4 cup pickled jalapeno pepper, diced (you can adjust this amount based on how spicy you like it)
1 cup cheddar cheese, shredded
1 cup monterey jack cheese or 1 cup mozzarella cheese, shredded
sour cream
guacamole
salsa

Steps:

  • Prepare tortillas by spreading a light layer (about 1 tablespoon) of remoulade or mayo on one side. This will act as your "glue" for the fillings. Set aside.
  • Heat oil in non-stick skillet over medium heat. Add onion, garlic, shrimp, and seasonings; saute about 2-3 minutes or until shrimp turn pink. Remove shrimp mixture from pan and place in bowl. Combine with crumbled bacon and pickled jalapenos. Taste to make sure seasonings are how you want them.
  • If necessary, spray pan with non-stick spray.
  • Place tortilla in pan, clean side down. On half of the tortilla,layer in 1/3 of cheddar cheese, then 1/3 shrimp mixture, then 1/3 of the jack or mozzarella cheese. Fold empty side of tortilla over the fillings and press down.
  • Let tortilla brown until crisp, about 4-5 minutes. Flip and brown the other side.
  • Repeat with remaining tortillas. Cut each folded quesadilla in half when ready to serve.
  • Serve with your choice of sour cream, guacamole, salsa, or all three!

1/2 lb shrimp, peeled and deveined
4 flour tortillas, 10 inch
2 tablespoons olive oil
2 tablespoons cajun seasoning, plus (or Creole)
1 teaspoon cajun seasoning, divided use
1/4 cup mayonnaise
1 teaspoon Worcestershire sauce
1/2 teaspoon cayenne pepper
1/2 teaspoon lemon juice
1 teaspoon Tabasco sauce
1/4 cup cilantro
1/2 teaspoon salt
1/4 cup diced green chilis (or poblano)
1 cup shredded four-cheese Mexican blend cheese

Steps:

  • Preheat oven to 425 degrees.
  • Make cajun remoulade by mixing mayonnaise with 2 Tbsp.
  • cajun seasoning, Worcester sauce, cayenne pepper, lemon juice, and Tabasco.
  • Refrigerate for 30 minutes.
  • Meanwhile, heat 1 Tbsp.
  • olive oil in skillet over high heat, 2 minutes.
  • Toss shrimp with 1 tsp.

  • Add chiles and cilantro to shrimp and mix.
  • Brush a large cookie sheet with olive oil.
  • Arrange 1 tortilla on cookie sheet.

  • Brush lightly with olive oil.
  • Bake 8 minutes, until lightly browned.

SHRIMP AND AVOCADO QUESADILLAS

A light meal for the summer heat. Great as an appetizer if divided. Presentation/ serving changes around our house. If serving as a meal, I generally leave the shrimp on top. If serving as an appetizer, I tend to cut the shrimp in half and tuck into the tortilla and then cut the tortilla into 2-4 smaller pieces. If cumin seeds are not available at your local carneceria, ground cumin can be substituted- adjust to your preference.

1/4 cup oil, olive, divided
1 1/2 cups onions, diced
7 tomatillos, medium, charred, husks removed
2 cups avocados, diced
3 tablespoons cilantro, chopped
1 tablespoon cumin, seeds, toasted
1/2 teaspoon salt, as needed
1/8 teaspoon pepper, black
8 tortillas, 6 inch
2 cups monterey jack cheese, shredded, divided
1 1/2 teaspoons garlic, minced
1 teaspoon chipotle pepper, minced
24 shrimp, large, peeled and deveined

Steps:

  • Heat 1 tablespoon of oil in a large skillet over a medium-high heat. Add onion and saute, stirring frequently, until tender (5-7 minutes). Transfer to a mixing bowl and let cool.
  • Finely chop the tomatillos and add to the cooled onions along with the diced avocado. Use a wooden spoon or potato masher to work the mixture into a course paste. Stir in cilantro and cumin, season with salt and pepper to taste.
  • Spread the avocado mixture on one side of each tortilla, top with 2 tablespoons of cheese, and fold the tortilla in half, pressing lightly to close them. Continue until all are folded. This may be done up to an hour in advance.
  • Heat 1 tablespoon of oil in a large skillet over a medium heat. Add garlic and chipotles and saute until golden, about 2 minutes. Increase the heat to a medium-high. Add the shrimp and saute until opaque and cooked through, 4-5 minutes. Keep warm.
  • Brush both sides of the quesadillas with the remaining oil. Cook in batches if a large saute pan over a medium heat until golden brown on both sides (2-3 minutes each side).
  • Cut the quesadillas in half and serve each with 3 shrimp on top.

2 red bell peppers
1 lb uncooked medium shrimp, peeled and deveined
1 tablespoon vegetable oil, plus
extra vegetable oil, for brushing tortillas
6 9-inch flour tortillas or 6 10-inch flour tortillas
3/4 cup chopped fresh cilantro
2 cups packed grated jalapeno jack cheese
1 cup packed grated sharp cheddar cheese
6 medium tomatillos, husked and thinly sliced

Steps:

  • Char bell peppers over gas flame or in broiler until blackened on all sides.
  • Remove from heat, enclose in paper bag and let stand 10 minutes.
  • Peel and seed, then cut into 1/4-inch strips.
  • Set aside.
  • Preheat broiler.
  • Toss shrimp with 1 tablespoon oil and place on baking sheet.
  • Broil shrimp until just opaque in center, about 2 minutes.
  • Cut shrimp in half lengthwise.

  • Arrange 8 tomatillo slices atop cheese on each tortilla, then bell pepper strips and shrimp, dividing equally.
  • Sprinkle remaining 1 cup Monterey Jack cheese over shrimp on each tortilla, dividing equally.
  • Top with remaining 3 tortillas, pressing lightly to adhere.
  • Brush tops of tortillas with oil.
  • Bake quesadillas until cheese melts and tortillas are crisp, about 10 minutes.
  • Cut each quesadilla into 6 wedges and serve.

Steps:

  • In a hot greased pan cook the bell peppers and onions until they are browned.Add the chicken and cook thoroughly, and slice into strips.Add the spices, hot sauce, chicken broth, S&P, and the shrimp. Mix well.Cook over medium high heat until the shrimp are done. Taste to test seasonings level, add more if necessary. In a separate pan, spray nonstick cooking spray and put on medium heat. Place one quesadilla in the pan, add a handfull of each kind of cheese, add the meat and spices mixture, top with more cheese, and finish with another tortilla.
