  • Add the tomatoes, 1/4 cup basil, 1/4 cup parsley, and the red pepper flakes. Cook for 2 minutes, stirring constantly. Add the wine, clam juice, and heavy cream. Bring the mixture to a boil. Reduce the heat to medium-low and simmer for 7 to 8 minutes until the sauce thickens. Add 1/4 cup of the Parmesan, the cooked shrimp, the cooked pasta, and the remaining herbs. • Use fresh shrimp: Fresh shrimp have a sweeter, more delicate flavor than frozen shrimp. If you're using frozen shrimp, thaw them completely before cooking.
  • Cook the shrimp properly: Shrimp should be cooked until they are pink and opaque. Overcooked shrimp will be tough and rubbery.
  • Use a good quality olive oil: Olive oil adds a rich, flavorful base to the sauce. Look for an extra virgin olive oil that is made from 100% Italian olives.
  • Don't skimp on the garlic: Garlic is a key ingredient in this sauce. Use at least 2 cloves of garlic, or more if you like.
  • Add a touch of red pepper flakes: Red pepper flakes add a subtle kick of heat to the sauce. If you don't like spicy food, you can omit them.
  • Use a good quality pasta: The pasta is the foundation of this dish, so it's important to use a good quality pasta. Look for a pasta that is made from 100% durum wheat and that has a nice, firm texture.
  • Cook the pasta al dente: Al dente means "to the tooth" in Italian. It refers to the ideal cooking stage for pasta, where the pasta is still slightly firm to the bite.
  • Serve the pasta immediately: Shrimp penne with garlic sauce is best served immediately after it is made. The pasta will start to lose its flavor and texture as it sits.
